Spinach and Feta Puff Pastry Twists
Shatteringly crisp, buttery puff pastry wrapped around a savory, garlic-kissed spinach and feta filling. These easy twists are the ultimate crowd-pleasing appetizer that look incredibly fancy but come together in minutes.
- Squeezing the spinach completely dry prevents excess steam from making the pastry soggy.
- Using high-quality all-butter puff pastry ensures maximum rise and a shatteringly crisp texture.
- Brushing with an egg wash seals the twists and creates a beautiful, golden-brown sheen.
My first attempt at making puff pastry twists ended in a soggy, deflated disaster on my kitchen floor three winters ago. I was trying to impress my book club with a fancy-looking appetizer, but instead, I ended up scraping charred spinach off my cheap aluminum baking sheet while my guests politely chewed on raw, gummy dough.
I still remember the greasy film that clung to my fingers as I tried to twist the limp pastry.
Here is the thing I learned the hard way: frozen puff pastry is a temperamental beast, and most supermarket brands fail because they use cheap palm oil instead of real butter. When you bake these, the water in the butter vaporizes, creating steam that forces the dough layers apart to create that shatteringly crisp texture. If your pastry gets too warm while you are stuffing it with wet spinach, the fat melts prematurely, the protein matrix collapses, and you get a sad, greasy puddle.
The simple fix is to squeeze your cooked spinach until your forearms literally ache, removing every single drop of excess moisture.
Trust me on this one.

Ingredients
- 1 package (17.3 oz) puff pastry sheets, thawed but cold
- 10 oz frozen chopped spinach, thawed and squeezed completely dry
- 1 cup crumbled feta cheese
- 1/2 tsp Diamond Crystal kosher salt
- 1/4 tsp freshly cracked black pepper
- 1/4 tsp garlic powder
- 1 large egg, beaten (for egg wash)
- 1 tbsp sesame seeds (optional)
Directions
- Preheat your oven to 400°F (200°C) and line two large baking sheets with parchment paper.
- In a medium bowl, mix the completely dry spinach, crumbled feta, Diamond Crystal kosher salt, black pepper, and garlic powder until well combined.
- Roll out one sheet of cold puff pastry on a lightly floured surface into a 10x12-inch rectangle.
- Spread the spinach and feta mixture evenly over the bottom half of the pastry sheet.
- Fold the top half of the pastry over the filling, pressing down gently to seal the layers together.
- Use a sharp knife or pizza cutter to cut the pastry into 1-inch wide strips.
- Twist each strip three to four times, then place them on the prepared baking sheets, pressing the ends down to stick.
- Brush each twist generously with the beaten egg wash and sprinkle with sesame seeds if using.
- Bake for 18 to 20 minutes, rotating the pans halfway through, until the pastry is puffed and deeply golden brown.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid an oversalted filling.
- The physics of puff pastry relies on moisture vaporization. Always buy an all-butter brand like Dufour because butter contains about 18% water, which turns to steam in the oven and forces the laminated dough layers to rise beautifully.
- Keep an eye on the oven during the last 3 minutes of baking. The high fat content in the pastry and the delicate feta can go from perfectly golden to bitterly burnt in a matter of seconds.
- After a day in the fridge, the puff pastry will lose its signature shatter and become slightly soft. To restore its crispness, reheat them in a 350°F oven for 5 minutes instead of using the microwave.

Serving Suggestions
Serve these twists warm out of the oven for the absolute best texture, paired with a bright dipping sauce or as part of a larger party spread.
- Serve alongside a bowl of cool, creamy tzatziki or Greek yogurt dip.
- Pair with a fresh, crisp salad like our watermelon feta salad.
- Arrange on a platter with other finger foods like cheesy garlic cruffins.
- Serve as a savory side to a warm bowl of tomato soup.
Storage and Reheating
Storing these twists is incredibly straightforward, though they are hands down at their absolute best when eaten fresh and warm. If you do have leftovers, let them cool completely on a wire rack before transferring them to an airtight container.
Moisture is the ultimate enemy of laminated dough.
They will keep in the refrigerator for up to three days, but bear with me here: do not even think about putting them in the microwave. The microwave will turn your beautiful, flaky pastry into a rubbery, sad mess that clings to your teeth.
Instead, slide them back onto a baking sheet and heat them at 350°F (175°C) for about five to seven minutes.
They will crisp right back up.
Ingredient Substitutes
If you need to swap things out based on what is in your pantry, here are the easiest ways to do it without ruining the recipe.
- Puff Pastry: If you cannot find puff pastry, you can use phyllo dough, though the texture will be much more delicate and shatter-prone, similar to our Puff Pastry Ham Stacks.
- Feta Cheese: Goat cheese or ricotta mixed with a pinch of salt makes a wonderful, creamy alternative if feta is too salty for your taste.
- Spinach: Finely chopped kale or Swiss chard can be substituted for the spinach, just ensure they are fully cooked and squeezed dry first.
These savory twists have become my absolute go-to for last-minute hosting because they look incredibly impressive but require almost zero actual effort. Just remember to keep that pastry cold, squeeze that spinach dry, and enjoy the buttery, flaky reward!
