Chewy Strawberry Blondies
These chewy strawberry blondies combine a rich, brown-butter base with jammy roasted strawberries for the ultimate summer dessert bar.
- Roasting the strawberries concentrates their natural sugars and prevents a soggy bake.
- Browning the butter removes water and creates a rich, toffee-like flavor base.
- Using a high ratio of brown sugar ensures a dense, chewy texture rather than a cakey one.
I still remember the humid July afternoon when I tried to fold fresh berries into my favorite blondie batter, hoping for something as spectacular as my Strawberry Cheesecake Bars with a Creamy, Lush Texture, only to watch it turn into a soggy, gray-purple soup in the oven.
My forearms ached from whipping the eggs, and my kitchen smelled like caramelized sugar, but the center of that pan remained stubbornly raw.
The culprit was moisture. Fresh strawberries are basically delicious little water bombs, containing up to 92 percent water by weight. When they bake, that water escapes, completely wrecking the delicate gluten structure and protein matrix of your batter. This brand of baking pan failed every single test because it couldn't distribute heat fast enough to evaporate that sudden steam.
To fix this, we draw out that excess moisture first. Macerating and roasting the sliced strawberries concentrates their sugars and locks in the flavor.
Trust me on this one.
We are also browning our butter to eliminate its water content, which adds a nutty depth that pairs beautifully with the bright fruit.

Ingredients
- 115g unsalted butter (1 stick)
- 200g light brown sugar
- 1 large egg (room temperature)
- 1 tsp vanilla extract
- 130g all-purpose flour
- 1/2 tsp Diamond Crystal kosher salt
- 150g fresh strawberries, hulled and sliced
- 50g white chocolate chips
Directions
- Preheat oven to 350°F (175°C) and line an 8x8-inch baking pan with parchment paper.
- Toss the sliced strawberries with 1 tablespoon of sugar and spread them on a small baking sheet lined with parchment. Roast for 10 minutes to concentrate their juices, then let cool.
- Melt the butter in a saucepan over medium heat, swirling constantly until it foams, turns golden brown, and smells nutty. Pour into a bowl and let cool slightly.
- Whisk the brown sugar into the warm browned butter until fully incorporated, then whisk in the egg and vanilla extract until the mixture is smooth and glossy.
- Fold in the flour and kosher salt using a spatula just until combined, being careful not to overmix and develop too much gluten.
- Gently fold in the roasted strawberries and white chocolate chips, then spread the thick batter evenly into the prepared pan.
- Bake for 25 to 30 minutes until the edges are golden and a toothpick inserted into the center comes out with a few moist crumbs. </
Notes
- Salt Conversion: I always use Diamond Crystal kosher salt. If you are using standard fine table salt, cut the measurement in half (use 1/4 teaspoon) to avoid an overly salty bar.
- The Science of Chewiness: Unlike traditional Chocolate Chip Brownies, blondies rely on brown sugar for their signature chew. The molasses in brown sugar is hygroscopic, meaning it actively attracts and holds onto moisture, keeping the crumb dense.
- Workflow Warning: Do not skip the strawberry roasting step! If you fold raw strawberries directly into the batter, they will release steam during baking, leaving you with a wet, gummy center.
- Storage Behavior: These blondies actually improve after a day in the fridge. The moisture redistributes, and the brown butter flavor deepens significantly.
- Pan Choice: Avoid glass baking dishes here. Glass is an insulator and retains heat poorly, which can lead to overcooked edges and a raw middle. Use a light-colored metal pan instead.
Serving Suggestions
These blondies are absolutely perfect on their own, but you can easily turn them into a show-stopping dessert with a few simple additions.
- Serve warm with a generous scoop of vanilla bean ice cream.
- Drizzle with a spoonful of warm strawberry sauce or a splash of Iced Strawberry Latte syrup.
- Pair them alongside a fresh Watermelon Feta Salad at your next summer barbecue.
- Enjoy a square in the morning with a cold glass of milk or a Maple Cream Cold Brew.
Storage and Reheating
Keep them airtight.
Store any leftover blondies in an airtight container at room temperature for up to three days. If your kitchen gets particularly warm in the summer, slide them into the fridge instead.
Cold blondies develop an incredibly dense, fudge-like texture that I actually prefer over room temperature. Just tap the container against your counter to loosen them before serving.
To reheat, pop a square into the microwave for about ten to fifteen seconds. This softens the butter fats and melts the white chocolate chips, making the bar taste like it was just pulled fresh from the oven.
You can also freeze these bars for up to three months. Wrap individual squares tightly in plastic wrap before placing them in a heavy-duty freezer bag.
Ingredient Substitutes
If you need to make some adjustments based on what is in your pantry, here are the easiest swaps that won't ruin the texture:
- Strawberries: You can easily swap these for raspberries or blackberries, or even use a mix of berries like in our 4th of July Cake with rich layers of strawberries and blueberries.
- All-Purpose Flour: A 1:1 gluten-free baking flour blend works perfectly here, though the bars may be slightly less chewy.
- Brown Butter: If you are short on time, standard melted butter works, but you will miss out on those complex, toasted-milk-solid notes.
- White Chocolate Chips: Swap them for dark chocolate chunks, chopped macadamia nuts, or omit them entirely.
These blondies are proof that a little food science can rescue a summer classic from soggy disaster. Bake a batch, share them with friends, and let me know if you love that cold, fudgy fridge texture as much as I do!
