This Strawberry Lemonade Quick Bread is incredibly moist, bursting with fresh strawberries, and topped with a tart lemon glaze that tastes like pure summer.

Strawberry Lemonade Quick Bread
Why This Recipe Works:
  • Flour-coating the strawberries prevents them from sinking to the bottom of the pan and creating gummy pockets of raw dough.
  • Rubbing lemon zest into the sugar releases essential oils, maximizing the bright citrus aroma without adding excess liquid acid to the batter.
  • Sour cream adds fat and lactic acid, which tenderizes the gluten network for an incredibly soft, tight crumb.

I still remember the sticky July afternoon when my thumbs were stained purple from hulling three quarts of local berries, and my forearms actually ached from trying to whip a heavy batter by hand.

That first loaf was a complete disaster, collapsing into a soggy, pale crater in the center while the edges burned to a crisp.

Here is the scientific reality: strawberries are basically little water balloons, containing about 91 percent water by weight. When they hit the oven heat, they release all that moisture directly into the surrounding flour, which completely wreaks havoc on your gluten network.

Cheap, thin aluminum loaf pans only make this wet-center issue worse by scorching the bottom before the middle can rise.

The fix is incredibly simple.

First, we toss the chopped berries in a tablespoon of flour to absorb that initial moisture release, and then we rub fresh lemon zest directly into the sugar with our fingertips.

Think about this in terms of physics: the abrasive sugar crystals tear open the zest's cellular walls, releasing the oil-soluble flavor compounds directly into the batter.

While I love a classic Strawberry Pound Cake or a fluffy Strawberry shortcake slab cake, this quick bread is hands down the easiest way to get your summer berry fix without turning baking into a full-day project.

Trust me on this one.

Ingredients

  • 2 cups (250g) all-purpose flour, divided (reserve 1 tablespoon for tossing with strawberries)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon Diamond Crystal kosher salt
  • 1 cup (200g) granulated sugar
  • Zest of 2 large lemons
  • 2 large eggs, room temperature
  • 1/2 cup (120ml) neutral oil (like canola or vegetable oil)
  • 1/2 cup (120g) sour cream, room temperature
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups (225g) fresh strawberries, hulled and chopped
  • 1 cup (120g) powdered sugar (for the glaze)
  • 2 tablespoons fresh lemon juice (for the glaze)

Directions

  1. Preheat your oven to 350°F (175°C) and grease an 8.5 x 4.5-inch metal loaf pan, lining the bottom and sides with parchment paper for easy removal.
  2. In a medium bowl, whisk together 1 cup and 15 tablespoons of the all-purpose flour, baking powder, baking soda, and kosher salt.
  3. In a separate large bowl, combine the granulated sugar and lemon zest, using your fingertips to rub them together until the sugar is fragrant and damp.
  4. Whisk the eggs, neutral oil, sour cream, 3 tablespoons of lemon juice, and vanilla extract into the lemon sugar until completely smooth.
  5. Gently fold the dry ingredients into the wet ingredients using a spatula, stopping just before the flour is fully incorporated to avoid overworking the protein matrix.
  6. Toss the chopped strawberries with the reserved 1 tablespoon of flour in a small bowl until coated, then gently fold them into the batter.
  7. Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean with just a few moist crumbs.
  8. Let the bread cool in the pan for 10 minutes, then use the parchment paper sling to transfer it to a wire rack to cool completely before drizzling with the lemon glaze.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, cut the measurement in half (use 1/4 teaspoon) to avoid an overly salty loaf.
  • Rubbing the lemon zest into the sugar is essential because the oil-soluble flavor compounds in citrus skin dissolve beautifully in fat and sugar, giving you a much deeper lemon flavor than juice alone can provide.
  • Watch your baking time closely around the 45-minute mark; if the top is browning too quickly but the center is still jiggly, tent the loaf loosely with aluminum foil to prevent burning.
  • After a day in the fridge, the moisture from the strawberries will migrate slightly, making the bread even fudgier and more intensely flavored, though the glaze may soften.
  • Ensure your eggs and sour cream are at room temperature so they emulsify properly into the oil, preventing a split batter that bakes up dense.

Serving Suggestions

This bright, citrusy loaf is incredibly versatile and makes for a stunning addition to any brunch spread or afternoon tea.

  • Serve thick slices slightly warm with a generous smear of salted butter to balance the sweet glaze.
  • Pair it with a cold glass of homemade Peach Lemonade for the ultimate summer afternoon treat.
  • Toast a slice on a griddle with a little butter until the edges get crispy and caramelized.
  • Serve alongside a dollop of whipped mascarpone cheese and a few extra sliced fresh strawberries.
  • Enjoy a slice in the morning next to a hot, creamy Cherry Vanilla Latte to kickstart your day.

Storage and Reheating

You can store this quick bread in an airtight container at room temperature for up to two days.

If you want it to last longer, wrap it tightly in plastic wrap and pop it in the fridge, where it will happily stay moist for up to five days. In fact, I actually prefer eating it cold on day three because the strawberry juices settle into the crumb, making it incredibly fudgy.

To freeze, slice the unglazed loaf first and wrap individual slices in plastic wrap before placing them in a freezer-safe bag for up to three months.

A quick ten-second zap in the microwave also works wonders.

Ingredient Substitutes

If you find yourself missing an ingredient, here are the most reliable swaps I tested in my kitchen.

  1. Sour Cream: You can swap this 1:1 with full-fat Greek yogurt, which provides the same lactic acid to tenderize the crumb.
  2. Fresh Strawberries: Frozen strawberries work in a pinch, but do not thaw them first; toss them in flour while frozen and expect to add 5 to 10 minutes to the bake time.
  3. Neutral Oil: Melted unsalted butter can be used instead, though the loaf will be slightly less moist the next day.
  4. Lemon Juice: If you want a different citrus profile, swap the lemon juice and zest for lime to make a strawberry-lime bread, or check out our guide on Sourdough Raspberry Lemon Rolls for more berry-citrus inspiration.

This loaf has quickly become my absolute favorite way to welcome the warm weather, and I hope it brings a little bit of bright, sunny joy to your kitchen table too.
