A rich, glossy, homemade BBQ sauce sweetened with honey and deeply spiced with smoked paprika. Perfect for ribs, chicken, and dipping.

Sweet and Tangy BBQ Sauce with Honey and Smoked Paprika
Why This Recipe Works:
  • Honey contains natural fructose which creates a beautiful, glossy lacquer without the cloying, heavy sweetness of corn syrup.
  • Smoked paprika contains oil-soluble flavor compounds that bloom beautifully when simmered with tomato paste, mimicking real woodsmoke.
  • Apple cider vinegar provides a sharp, acetic acid backbone that cuts through the rich sugars, keeping the sauce balanced and bright.

I still remember the sticky, copper-colored ring burned onto my mother’s laminate countertop from a cheap plastic bottle of store-bought barbecue sauce.

I had squeezed it so hard the cap split, sending a jet of high-fructose corn syrup straight onto my sleeve, and scrubbing that stubborn, artificial hickory smell out of my forearms took three rounds of dish soap.

Bear with me here: most commercial sauces fail because they rely on liquid smoke and corn starch to mimic the rich body of a slow-simmered glaze, resulting in a gelatinous paste that burns to a bitter black crust the second it hits the heat of your grill. When you brush those gloppy store brands onto Smoky Grilled Ribs, the sugar caramelizes too quickly, trapping raw, uncooked starch underneath.

The fix is remarkably simple: we build a real emulsion using honey for a glossy cling and smoked paprika for natural, wood-fired depth.

It takes fifteen minutes.

I tested this recipe with four different types of paprika before realizing that sweet Hungarian smoked paprika is hands down the absolute perfect choice here, especially when whisking it by hand until your wrist aches a tad.

You can slather this over Crockpot BBQ Chicken or use it to glaze a batch of Hasselback Kielbasa for an effortless weeknight dinner.

Ingredients

  • 1 cup tomato paste
  • 1/2 cup organic honey
  • 1/2 cup apple cider vinegar
  • 1/4 cup molasses
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Diamond Crystal kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup water

Directions

  1. In a medium saucepan, whisk together the tomato paste, honey, apple cider vinegar, molasses, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, cayenne pepper, and water until completely smooth.
  2. Place the saucepan over medium heat and bring the mixture to a gentle simmer, stirring constantly with a silicone spatula to prevent the bottom from scorching.
  3. Reduce the heat to low and let the sauce simmer uncovered for 12 to 15 minutes, stirring occasionally, until it thickens and darkens to a rich, glossy mahogany color.
  4. Remove the pan from the heat and let the sauce cool completely at room temperature before transferring it to a glass jar.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you are using standard Morton's kosher salt or fine table salt, cut the volume by half to avoid an overly salty batch.
  • Smoked paprika contains oil-soluble flavor compounds that require a small amount of heat to fully bloom, which is why simmering the sauce is crucial rather than just mixing it cold.
  • Keep your heat low and stir constantly with a silicone spatula; honey and molasses have high sugar contents and will scorch on the bottom of the pan in seconds if left unattended.
  • As the sauce cools and sits in the fridge, the pectin in the tomato paste will set, making the sauce noticeably thicker after 24 hours.

Serving Suggestions

This versatile sauce is a spectacular companion for all your grilling adventures, but it also shines as a table condiment for dipping and drizzling.

  • Brush it generously over grilled chicken breasts during the last five minutes of cooking.
  • Serve it as a dipping sauce alongside crispy Garlic Parmesan Potato Wedges.
  • Drizzle it over a warm pulled pork sandwich piled high with fresh coleslaw.
  • Use it as a savory glaze for a classic oven-baked meatloaf.
  • Pair it with smoked sausages or grilled kielbasa for an easy backyard appetizer.

Storage and Reheating

Store this sauce in a glass jar.

Plastic containers will absorb the strong aromas of vinegar and smoked paprika, leaving a stubborn scent that never quite washes out. In a sealed glass jar, it will happily keep in the refrigerator for up to two weeks.

If you want to freeze it, leave an inch of headspace at the top of the jar to allow for expansion as the liquid freezes. It can be frozen for up to three months.

When you are ready to use it, let it thaw overnight in the fridge, then give it a vigorous shake to re-emulsify any separated liquids. You can warm it gently on the stovetop over low heat if you prefer it hot.

Ingredient Substitutes

If you find yourself missing an ingredient, here are the best swaps that won't ruin the balance of your sauce.

  1. Honey: You can swap this for pure maple syrup, though it will yield a slightly thinner consistency and a more autumnal flavor profile.
  2. Apple Cider Vinegar: White wine vinegar or fresh lemon juice can work in a pinch, though you will lose some of that classic fruity tang.
  3. Molasses: Dark brown sugar can be used instead, but you will miss out on that deep, slightly bitter complexity that molasses provides.
  4. Smoked Paprika: If you only have sweet paprika, use it, but add a tiny drop of liquid smoke to capture that essential woodsy aroma.

Once you realize how incredibly easy it is to whip up a batch of this glossy, smoky gold in your own kitchen, those dusty plastic bottles at the grocery store will lose their appeal forever. Happy grilling, friends!
