Ingredients
- 1 package (19 oz) refrigerated cheese tortellini
- 1 cup cherry tomatoes, halved
- 1 cup English cucumber, diced
- 1/2 cup yellow bell pepper, diced
- 1/2 cup kalamata olives, pitted and halved
- 1/2 cup mini mozzarella balls, halved
- 1/4 cup red onion, finely diced
- 1/2 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 clove garlic, grated
- 1 tsp dried oregano
- 1/2 tsp Diamond Crystal kosher salt
- 1/4 tsp freshly cracked black pepper
- 1/2 cup fresh basil leaves, torn
Directions
- Bring a large pot of heavily salted water to a rolling boil. Cook the tortellini for exactly 1 minute less than the package instructions so they remain al dente.
- While the pasta cooks, whisk together the olive oil, red wine vinegar, grated garlic, dried oregano, kosher salt, and black pepper in a large bowl.
- Drain the tortellini, reserving 2 tablespoons of the starchy pasta water. Do not rinse the pasta under cold water.
- Immediately transfer the hot tortellini to the bowl with the dressing. Toss gently to coat, then let it sit for 10 minutes to absorb the flavors.
- Add the cherry tomatoes, cucumber, bell pepper, olives, mozzarella, red onion, and the reserved pasta water. Toss to combine.
- Just before serving, fold in the fresh torn basil leaves to prevent them from bruising or turning black.
Notes
- We highly recommend using Diamond Crystal kosher salt; if you are using fine table salt, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon).
- Do not rinse the cooked tortellini. Rinsing washes away the surface starches, which are essential for emulsifying the dressing and helping it cling to the pasta.
- Watch the garlic closely when grating it directly into the dressing; raw garlic can quickly overpower the salad if left in large chunks, so use a microplane for a fine paste.
