Turkey Bacon Jalapeño Popper Egg Rolls
These crispy turkey bacon jalapeño popper egg rolls deliver all the smoky, cheesy, spicy goodness of traditional poppers without the messy oven blowouts, wrapped in a shatteringly crisp shell.
- The Sealed Chamber: The egg roll wrapper completely seals the cheese, preventing the classic oven blowout.
- Pre-Cooked Bacon: Crisping the turkey bacon beforehand ensures you get smoky crunch in every single bite.
- Starch Gelatinization: Air frying at a high temperature rapidly dehydrates the outer wrapper for an ultra-crisp texture without deep frying.
I still carry a physical reminder of my first encounter with a jalapeño popper at a humid July barbecue back in 2018.
The molten cream cheese exploded like culinary lava, searing my palate while I desperately tapped my tongs against my hip to distract from the pain.
Traditional poppers are structurally flawed because the cheese liquefies and escapes onto the baking sheet, leaving you with a sad, empty pepper skin while the turkey bacon stays flabby instead of getting shatteringly crisp, a problem I also had to solve when making my Jalapeno Poppers with Turkey Bacon.
But there is a simple fix.
Encasing the entire creamy, smoky mixture inside a paper-thin egg roll wrapper solves the structural leak while delivering an unbelievable crunch. The wrapper acts as a sealed pressure chamber, trapping the steam to soften the peppers while the starch gelatinization on the exterior creates a blistered, golden shell that holds its shape beautifully. I tested this with three different brands of wrappers, and the thinnest ones won hands down because they don't absorb excess oil.
I learned this the hard way after scraping exploded cheese off my oven floor three times, which is why I now prefer this method over traditional Southwest Egg Rolls when I want a smoky, spicy kick that actually stays inside the wrapper.

Ingredients
- 8 slices turkey bacon, cooked extra crispy and crumbled
- 6 large fresh jalapeños, seeded and finely diced
- 8 oz cream cheese, softened
- 1 cup sharp cheddar cheese, freshly shredded
- 1/2 tsp garlic powder
- 1/2 tsp Diamond Crystal kosher salt
- 12 egg roll wrappers
- 1 egg, beaten (for egg wash seal)
- Avocado oil spray
Directions
- In a medium mixing bowl, combine the softened cream cheese, crumbled turkey bacon, diced jalapeños, shredded cheddar, garlic powder, and kosher salt. Stir vigorously with a stiff spatula until the mixture is completely uniform.
- Lay one egg roll wrapper on a clean, dry cutting board with one corner pointing directly toward you, forming a diamond shape.
- Spoon approximately two tablespoons of the cream cheese filling onto the lower third of the wrapper, shaping it into a log.
- Fold the bottom corner up tightly over the filling, then fold the left and right side corners inward toward the center.
- Brush the remaining top corner lightly with the beaten egg wash, then roll the egg roll tightly upward to seal it completely. Repeat with the remaining wrappers.
- Preheat your air fryer to 390°F (200°C) for 5 minutes. Lightly spray the air fryer basket with avocado oil.
- Arrange the egg rolls in a single layer in the basket, ensuring they do not touch. Spray the tops generously with avocado oil to promote even browning.
- Air fry for 10 to 12 minutes, flipping them over halfway through and spraying again, until the wrappers are blistered, golden brown, and crisp. Let cool for 3 minutes before serving.
Notes
- Salt Conversion: I use Diamond Crystal kosher salt. If you are using Morton's kosher salt or standard fine table salt, cut the volume in half to 1/4 teaspoon to avoid over-seasoning the filling.
- The Cream Cheese Rule: Always use full-fat brick cream cheese. Low-fat or whipped cream cheese contains too much water, which turns to steam and causes the egg rolls to burst open during cooking.
- Prevent Wrapper Drying: Keep your unused egg roll wrappers covered with a damp paper towel while working. If they dry out, they will crack during folding and leak cheese everywhere.
- Storage Behavior: After a day in the fridge, the wrappers will soften as moisture migrates from the filling. Do not microwave them to reheat; use the air fryer to restore the crunch.
Serving Suggestions
These crispy rolls are best enjoyed hot, paired with dipping sauces that cut through the rich cheese and smoky bacon.
- Sweet chili sauce for a sweet-and-spicy contrast.
- Cool cilantro lime ranch dip to temper the jalapeño heat.
- A cold craft beer, specifically a hoppy IPA, to cut through the rich dairy.
- Serve alongside a fresh Lemon Arugula Pasta Salad to balance the fried richness.
- Plated on a wooden board with fresh lime wedges for squeezing over the top.
Storage and Reheating
Leftovers can be stored in an airtight container in the refrigerator for up to three days.
To reheat, pop them back into the air fryer at 350°F for 4 to 5 minutes. This quickly crisp-fries the exterior skin again without melting the cheese filling into a puddle.
Avoid the microwave at all costs.
Microwaving turns the crispy wrapper into a chewy, rubbery sleeve that ruins the entire texture. If you want to freeze them, do it before cooking; freeze them solid on a baking sheet, then transfer to a zip-top bag for up to two months.
Ingredient Substitutes
If you need to adapt this recipe based on what is in your pantry, here are the easiest swaps:
- Jalapeños: Swap for mild canned green chiles or sweet bell peppers if you want zero heat.
- Turkey Bacon: Regular pork bacon works beautifully, just ensure it is cooked extra crispy before crumbling.
- Cheddar Cheese: Monterey Jack, Pepper Jack, or Colby cheese make excellent melting alternatives.
- Egg Roll Wrappers: You can use phyllo dough or spring roll wrappers, though the texture will be lighter and flakier, similar to Air Fryer Spring Rolls.
These have officially replaced standard party platters in my house, mostly because I no longer have to scrub baked-on cheese off my sheet pans. Let me know if you make them, and please, let them cool for at least two minutes before taking that first bite—your mouth will thank you.
