Ingredients
- 2 large flour tortillas (10-inch)
- 4 tbsp cream cheese, softened
- 2 tbsp whole-berry cranberry sauce
- 6 oz sliced turkey breast (leftover or deli)
- 1 cup fresh baby spinach
- 1/4 cup white cheddar cheese, shredded
- 1/4 tsp Diamond Crystal kosher salt
Directions
- Lay the flour tortillas flat on a clean cutting board. Press them flat against the counter with your palms to ensure they are pliable.
- Spread 2 tablespoons of cream cheese in an even layer over each tortilla, leaving a half-inch border around the edges. This cream cheese layer acts as your moisture barrier.
- Spread the cranberry sauce down the center third of each tortilla, directly on top of the cream cheese.
- Layer the sliced turkey breast over the cranberry sauce, followed by the shredded white cheddar and fresh baby spinach. Sprinkle with Diamond Crystal kosher salt.
- Fold the left and right sides of the tortilla inward over the filling. Tuck the bottom edge up and roll tightly away from you, using your thumbs to pinch the seam and keep the filling compressed. Rolling a wrap can feel a tad clumsy at first, but keeping firm pressure is key.
- Slice diagonally with a sharp serrated knife and serve immediately, or wrap tightly in parchment paper for later.
Notes
- I highly recommend using Diamond Crystal kosher salt. If you only have fine table salt, cut the measurement in half (use 1/8 teaspoon instead of 1/4 teaspoon) to avoid over-salting.
- Cream cheese contains fat-soluble compounds that repel water. This creates a hydrophobic barrier, preventing the water molecules in the cranberry sauce from migrating into the flour tortilla's protein matrix and making it soggy.
- Don't overfill the wrap. It is tempting to pile on the turkey, but exceeding 3 ounces of meat per wrap will cause the tortilla to tear when you tuck the edges.
- After a day in the fridge, the spinach will begin to wilt slightly and release moisture. For the best texture, eat these wraps within 12 hours of assembly.
