Buffalo Chicken Mac and Cheese
This ultra-creamy Buffalo Chicken Mac and Cheese combines tender chicken, a velvety three-cheese sauce, and a spicy kick for the ultimate comfort food mashup.
- Freshly Grated Cheese: Grating your own cheese prevents the gritty texture caused by anti-caking agents in pre-shredded bags.
- Roux-Based Stability: A classic butter-and-flour roux stabilizes the dairy, keeping the cheese sauce velvety even when baked.
- Layered Flavor: Tossing the chicken in hot sauce before folding it in ensures every single bite is packed with bold flavor.
I still remember the chilly November evening I tried to make a spicy pasta bake for my college roommates.
I ended up with a grainy, separated mess of oil and broken cheese that looked more like a science experiment gone wrong.
My wrist throbbed from scraping the scorched pot.
Most home cooks run into this exact disaster because they use pre-shredded cheese bags packed with potato starch, which actively prevents the proteins from melting into a smooth, cohesive emulsion.
When you toss that into a boiling liquid, the heat shocks the dairy, causing the fat to separate from the protein matrix and leaving you with a gritty texture that clings to the roof of your mouth.
The simple fix is to grate your own block of sharp cheddar to ensure a silky melt.
We build a stable sauce using a traditional flour-and-butter roux, then fold in tender chicken tossed in tangy Frank's RedHot.

Shredding chicken with two forks can feel a tad clumsy, but those ragged edges cling to the sauce much better than neat little cubes.
If you have an air fryer, you can whip up some quick Air Fryer Chicken Bites to shred.
Just season them with Diamond Crystal kosher salt (use 1 teaspoon, or 1/2 teaspoon of Morton's) to draw out moisture and concentrate the savory chicken flavor.
Generic store-brand hot sauces failed my tests because they lacked the vinegar punch to cut through the heavy dairy.
Stick to Frank's RedHot.
Trust me on this: do not skip the blue cheese crumbles.

Ingredients
- 16 oz cavatappi or elbow pasta
- 2 cups cooked chicken, shredded (like leftover BBQ Pulled Chicken or baked breasts)
- 1/2 cup Frank's RedHot sauce
- 4 tbsp unsalted butter
- 1/4 cup all-purpose flour
- 2 cups whole milk, warmed
- 1 cup heavy cream
- 2 cups sharp cheddar cheese, freshly grated
- 1 cup Monterey Jack cheese, freshly grated
- 1 tsp Diamond Crystal kosher salt (or 1/2 tsp Morton's)
- 1/2 tsp garlic powder
- 1/2 cup blue cheese crumbles (optional, for topping)
- 1/2 cup panko breadcrumbs
Directions
- Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
- Cook the pasta in a large pot of salted water until it is just shy of al dente, then drain and set aside.
- In a medium bowl, toss the shredded chicken with the Frank's RedHot sauce until completely coated, then set aside to let the meat absorb the vinegar-forward heat.
- Melt the butter in a large saucepan over medium heat, then whisk in the flour and cook for 1-2 minutes to eliminate the raw flour taste.
- Slowly pour in the warm milk and heavy cream, whisking constantly to prevent lumps, and simmer until the sauce thickens enough to coat the back of a spoon.
- Remove the saucepan from the heat and gradually stir in the grated cheddar and Monterey Jack cheeses, whisking until completely melted and smooth.
- Stir in the salt, garlic powder, cooked pasta, and buffalo chicken until the pasta is thoroughly coated in the cheese sauce.
- Transfer the mixture to the prepared baking dish, top with panko breadcrumbs and blue cheese crumbles, and bake for 20 minutes until bubbling and golden brown.
Notes
- Salt Conversion: Always use Diamond Crystal kosher salt for seasoning. If you only have Morton's coarse kosher salt, reduce the measurement by half to avoid an overly salty dish.
- Science of the Melt: Grate your cheese from a block. Pre-shredded cheeses are coated in cellulose and potato starch to prevent sticking, which disrupts the protein matrix and prevents a smooth, velvety melt.
- Roux Workflow: Keep a close eye on your roux. If the butter and flour mixture turns dark brown or smells burnt, discard it and start over, as a burnt roux will ruin the delicate dairy flavors of your cheese sauce.
- Storage Behavior: As the mac and cheese sits in the fridge, the pasta will continue to absorb the liquid from the sauce. When reheating, add a splash of milk to restore its creamy consistency.
Serving Suggestions
This rich and spicy dish pairs beautifully with fresh, crisp sides that cut through the heavy cheese and heat.
- A crisp, refreshing Cucumber Onion Salad to cleanse the palate between bites.
- Crisp celery and carrot sticks served with a side of extra blue cheese dressing.
- A simple green salad tossed in a light vinaigrette.
- A cold glass of sweet tea or a hoppy IPA to balance the buffalo heat.
Storage and Reheating
Leftovers keep beautifully in the fridge for up to four days.
However, bear with me here: do not just throw a cold plate of this into the microwave on high power. The intense, uneven heat will cause the fats in the cheese sauce to break, leaving you with a greasy puddle and dry, rubbery chicken.
Instead, place your portion in a baking dish, splash in two tablespoons of whole milk, and cover it tightly with foil. Bake at 325°F for about fifteen minutes until it is heated through and creamy again.
It takes a little longer, but your taste buds will thank you.
Ingredient Substitutes
If you need to make some adjustments based on what is in your pantry, here are the easiest swaps:
- The Pasta: If you don't have cavatappi, penne or large elbow macaroni work wonderfully to trap the cheese sauce.
- The Cheese: Swap Monterey Jack for pepper jack if you want an extra kick of spice, or use mozzarella for an epic cheese pull.
- The Chicken: Leftover rotisserie chicken is a fantastic time-saver, or you can use leftover BBQ Pulled Chicken for a sweet-and-smoky twist.
- The Hot Sauce: While Frank's RedHot is classic, any cayenne-based hot sauce will work in a pinch.
I hope this cozy, spicy bake brings as much comfort to your table as it does to mine. Let me know in the comments if you braved the blue cheese topping—I promise it's worth it!

I've been developing recipes for about 12 years, and this one went through the same routine as everything else here: I made it, changed something, made it again, then had someone else cook it from just the written steps to see where it tripped them up. That's the part I care about most – not just that a recipe works for me, but that it works on a Tuesday night in your kitchen too.
