Ingredients

Directions

  1. Place the diced potatoes in a microwave-safe bowl, cover with a damp paper towel, and microwave on high for 5 minutes until slightly tender.
  2. While potatoes par-cook, heat a large cast-iron skillet over medium-high heat and add the sliced sausage, searing for 3-4 minutes per side until beautifully browned.
  3. Fish out the sausage with tongs, leaving the rendered fat in the skillet.
  4. Toss the par-cooked potatoes into the hot skillet with the sausage fat, seasoning with Diamond Crystal kosher salt, black pepper, and ranch seasoning.
  5. Cook the potatoes undisturbed for 5 minutes to develop a deep, golden crust, then flip and cook for another 3-4 minutes until tender.
  6. Return the sausage to the skillet, stir to combine, and top with the shredded cheddar cheese.
  7. Cover the skillet with a lid or foil for 2 minutes until the cheese is completely melted and bubbling, then garnish with sliced green onions and serve immediately.

Notes

  • We highly recommend using Diamond Crystal kosher salt; if you are using Morton's or fine table salt, cut the volume in half (use 1/2 teaspoon instead of 1 teaspoon) to avoid an over-salted skillet.
  • Yukon Gold potatoes are ideal here because their medium-starch content strikes the perfect balance between holding their shape and releasing enough starch to create a crispy exterior.
  • Keep an eye on the ranch seasoning; the milk solids in dry ranch mix can burn quickly if the skillet is screaming hot, so lower the heat to medium before tossing the potatoes.
  • After a day in the fridge, the potatoes will lose their crispness as the starches retrograde, but reheating them in a dry skillet over medium heat will revive that beautiful texture.
