I still remember the humid July afternoon my sister dropped a glass bowl of raw corn salad onto my freshly scrubbed kitchen floor. The glass shattered, but the sweet, milky smell of raw corn mingled with bruised cilantro stayed in my nose for days.

Ingredients
- 3 cups fresh corn kernels (from about 4 ears of corn)
- 2 large ripe avocados, diced
- 1 cup cherry tomatoes, halved (you can also use them in our Cucumber Sweet Pepper Salad)
- 1/2 cup red onion, finely diced
- 1/2 cup fresh cilantro, chopped
- 3 tbsp extra virgin olive oil
- 2 tbsp fresh lime juice
- 1 tsp Diamond Crystal kosher salt
- 1/4 tsp freshly cracked black pepper
- 1/4 tsp ground cumin
Directions
- If using fresh corn, slice the kernels off the cob. For a deeper flavor, char the kernels in a dry cast-iron skillet over medium-high heat for 5 minutes until slightly blackened.
- Place the diced red onion in a small bowl of ice water for 5 minutes to tame its sharp sulfur bite, then drain and pat dry.
- In a large mixing bowl, whisk together the extra virgin olive oil, fresh lime juice, Diamond Crystal kosher salt, black pepper, and ground cumin until fully emulsified.
- Add the corn, drained red onions, halved cherry tomatoes, and chopped cilantro to the bowl with the dressing and toss gently to coat.
- Just before serving, gently fold in the diced avocado using a rubber spatula to avoid mashing the delicate pieces.
Notes
- Standard table salt failed our taste tests because its fine grain makes it too easy to over-salt; always stick to Diamond Crystal kosher salt, or cut the measurement in half if using fine table salt.
- The science of avocado browning is all about polyphenol oxidase. Whisking the lime juice directly into the olive oil creates a temporary emulsion that physically coats the avocado cells, blocking oxygen from triggering the browning reaction.
- Do not prep the avocados ahead of time. Slice and dice them at the absolute last minute, and fold them in with a gentle hand so you don't end up with a bowl of chunky guacamole.
- While the emulsified dressing slows down oxidation, this salad is best enjoyed within 4 hours. After a day in the fridge, the tomatoes will release their water and the avocado will soften, losing its pristine texture.
