My first attempt at seafood lasagna was an absolute, watery disaster that pooled on the plate like a sad, lukewarm tide.

I had foolishly layered raw, wet shrimp directly between sheets of pasta, expecting the oven's heat to work some sort of dry-heat magic. Instead, those little crustaceans released all their moisture, turning my beautiful, hand-whisked creamy cheese sauce into a soupy, broken mess that made me want to slide right down onto the kitchen floor.

The physics of seafood pasta demand a completely different strategy.

Shrimp contain a high percentage of water held within their protein matrix, which rapidly contracts and expels liquid the moment it hits 140°F (60°C). If that water expels inside your lasagna, it dilutes the fats in your cheese and breaks your cream sauce. To prevent this, we must par-cook the shrimp first to lock in their shape and release that excess moisture before they ever touch a noodle.

My foolproof fix is a quick sear in hot garlic butter, similar to how I prep my 15-Minute Creamy Garlic Shrimp, which creates a gorgeous, caramelized exterior while keeping the interior tender.

Ingredients

  • 12 lasagna noodles
  • 1 lb medium shrimp, peeled and deveined
  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tsp Diamond Crystal kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1/4 cup all-purpose flour
  • 2.5 cups whole milk, warmed
  • 1 cup freshly grated Parmesan cheese
  • 2 cups shredded low-moisture mozzarella cheese
  • 15 oz ricotta cheese
  • 1 large egg
  • 1 tbsp fresh lemon zest
  • 2 tbsp chopped fresh parsley

Directions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9x13-inch baking dish.
  2. Boil the lasagna noodles in salted water until al dente, then drain and lay them flat on parchment paper to prevent sticking.
  3. Melt the butter in a large skillet over medium-high heat, add the shrimp, garlic, salt, and pepper, and sear for 1 to 2 minutes per side until just pink but slightly undercooked. Remove the shrimp and set aside.
  4. In the same skillet with the remaining butter and pan juices, whisk in the flour to create a roux and cook for 1 minute.
  5. Slowly pour in the warm milk while whisking constantly, simmering until the mixture thickens into a smooth white sauce, then stir in half of the Parmesan cheese.
  6. In a medium bowl, mix together the ricotta cheese, egg, lemon zest, parsley, and the remaining Parmesan cheese.
  7. Spread a thin layer of the white sauce on the bottom of the baking dish, then layer 3 noodles, half of the ricotta mixture, a third of the mozzarella, half of the shrimp, and a third of the remaining white sauce.
  8. Repeat the layers once more, then top with the final 3 noodles, the remaining white sauce, and the remaining mozzarella cheese.
  9. Cover the dish with foil and bake for 25 minutes, then remove the foil and bake for an additional 15 minutes until the top is golden and bubbly. Let rest for 15 minutes before slicing.

Notes

  • We highly recommend using Diamond Crystal Kosher Salt; if you are using Morton's kosher salt, reduce the volume by half (use 1/2 teaspoon instead of 1 teaspoon) to prevent over-salting.
  • Low-moisture mozzarella is essential here because fresh mozzarella contains too much water, which will break the emulsion of your white sauce and leave you with a watery bake.
  • Keep a close eye on your garlic when searing the shrimp; garlic burns easily at high temperatures and will turn bitter, ruining the delicate flavor of the seafood.
  • As the lasagna cools in the fridge, the starch gelatinization process continues, making it much easier to slice clean, beautiful squares the next day.
  • Do not overcook the shrimp during the initial sear; they will finish cooking in the oven's thermal mass, and overcooked shrimp become rubbery and tough.

Store any remaining portions in an airtight container in the refrigerator for up to three days.

When reheating, avoid the microwave if you can, as it tends to heat unevenly and can make the shrimp rubbery. Instead, place a slice in an oven-safe dish, splash a tablespoon of milk over the top to restore moisture, cover with foil, and bake at 350°F (175°C) until heated through.

We do not recommend freezing this dish, as the dairy-heavy white sauce can separate and become grainy upon thawing.

Ingredient Substitutes

If you need to swap things out based on what you have in your pantry, here are the best tested alternatives.

  1. Shrimp: Swap with lump crab meat, lobster chunks, or bay scallops.
  2. Ricotta: Use cottage cheese (blitzed in a food processor for a smooth texture).
  3. Whole Milk: Half-and-half can be used for an even richer sauce, but avoid skim milk as it lacks the fat needed to stabilize the sauce.
  4. Gluten-Free: Use your favorite gluten-free lasagna sheets and a 1-to-1 gluten-free baking flour for the roux.
