Air Fryer Chicken & Mozzarella Wraps With Crispy Tortillas
These air fryer chicken and mozzarella wraps deliver a satisfying, golden crunch without the mess of deep frying, packed with melted cheese and seasoned chicken.
- High-velocity air circulation rapidly dehydrates the tortilla's surface, creating an ultra-crisp exterior without absorbing excess fat.
- Placing the wraps seam-side down utilizes the weight of the filling to seal the tortilla as the starch sets, preventing blowout.
- Mozzarella provides the perfect moisture-to-fat ratio, melting into a gooey protein matrix that binds the chicken together.
I still remember the Tuesday evening I tried to pan-fry a wrap in a slick of canola oil, only to have the tortilla split open, dumping shredded cheese directly onto the screaming hot cast iron. My kitchen filled with smoke, and my dinner was ruined.
It was incredibly frustrating.
I stood there scraping blackened cheese off the pan while my forearms ached from the frantic scrubbing.
The science behind this is simple: standard flour tortillas absorb oil like a sponge before the interior cheese even thinks about melting. The starch gelatinization in the tortilla requires dry, circulating heat to turn truly crispy rather than greasy.
Enter the air fryer, which solves everything by circulating super-heated air to mimic deep-frying physics with barely any oil. It is hands down the easiest way to get that shattered-glass crunch on your tortilla, much like we do with our crispy bacon ranch chicken wraps. Trust me on this one, you will never go back to the pan.
Bear with me here, because we are going to build these wraps with seasoned chicken, gooey mozzarella, and a tiny brush of oil to seal the deal.

Ingredients
- 2 large flour tortillas (10-inch)
- 1.5 cups cooked chicken breast, shredded
- 1 cup low-moisture mozzarella cheese, shredded
- 1/2 tsp Diamond Crystal kosher salt
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tbsp olive oil (for brushing)
Directions
- In a medium bowl, toss the shredded chicken with the Diamond Crystal kosher salt, garlic powder, and smoked paprika until evenly coated.
- Lay the tortillas flat on a clean work surface. Divide the seasoned chicken evenly down the center of each tortilla.
- Top the chicken with the shredded mozzarella cheese, ensuring it is distributed evenly to help bind the wrap.
- Fold the sides of each tortilla inward over the filling, then roll tightly from the bottom up to form a secure wrap.
- Lightly brush all sides of the wraps with olive oil, paying extra attention to the seams.
- Place the wraps seam-side down in the air fryer basket, leaving space between them for air to circulate.
- Air fry at 375°F (190°C) for 6 to 8 minutes, flipping halfway through, until the tortillas are golden brown and crispy.
Notes
- I highly recommend using Diamond Crystal kosher salt for seasoning; if you only have fine table salt, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid an over-salted filling.
- Use low-moisture mozzarella rather than fresh mozzarella; fresh mozzarella contains too much water, which will steam inside the wrap and turn your crispy tortilla into a soggy, structural failure.
- Keep a close eye on the wraps during the last two minutes of air frying, as flour tortillas can cross the line from beautifully golden to charred and bitter very quickly.
- Leftover wraps will lose their signature crunch in the fridge, but you can easily restore the crispy texture by popping them back into a 350°F air fryer for 3 to 4 minutes.
- If your wraps are unraveling in the air fryer, secure them with a toothpick before cooking, but remember to fish it out before taking your first bite.
Serving Suggestions
Serve these wraps hot out of the air fryer while the cheese is at its maximum stretch potential. They pair beautifully with a variety of fresh sides and dipping sauces.
- Serve alongside a crisp cucumber strawberry salad to balance the rich, cheesy wraps with a refreshing bite.
- Dip them in a side of creamy ranch dressing or a smoky chipotle mayo for an extra kick of flavor.
- Pair with a light mango cucumber salad for a bright, contrast of flavors.
- Offer a bowl of warm marinara sauce on the side for a fun, pizza-inspired dipping experience.
Storage and Reheating
Refrigerate leftovers in an airtight container.
As they sit in the cold, the moisture from the chicken and cheese will inevitably migrate into the tortilla, making it soft and a tad clumsy to handle. Do not even think about using the microwave to reheat them, unless you enjoy eating a rubbery, sad excuse for a wrap.
Instead, preheat your air fryer to 350°F (175°C) and heat the wraps for 3 to 5 minutes.
This completely restores the crunch.
If you want to freeze them, wrap the uncooked assembled tortillas tightly in plastic wrap and store them in a freezer bag for up to a month. You can air fry them straight from frozen at 350°F for about 12 minutes.
Ingredient Substitutes
If you need to swap things out based on what is currently hiding in your pantry, here are some easy adjustments.
- Chicken: Swap the shredded chicken breast for leftover turkey, or try our garlic chicken wraps filling for a different flavor profile.
- Mozzarella: Use sharp cheddar, Monterey Jack, or provolone if you want a stronger cheese flavor that still melts beautifully.
- Tortillas: Gluten-free tortillas can be used, but be gentle when rolling as they tend to tear more easily than standard flour tortillas.
- Spices: Feel free to swap the garlic powder and smoked paprika for taco seasoning or Italian seasoning to match your cravings.
I learned the hard way that rushing the rolling process leads to a cheese landslide, so take your time tucking those edges in. Once you hear that first loud, satisfying crunch as you bite into the golden shell, all that careful rolling will make perfect sense.
