  • 1 tsp Diamond Crystal kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 1/2 tsp garlic powder
  • 2 tbsp cornstarch
  • 1 tbsp baking powder
  • Avocado oil spray
  • 3 tbsp unsalted butter
  • 3 tbsp honey
  • 4 cloves garlic, finely grated
  • 1 tbsp soy sauce
  • 1 tbsp chopped fresh parsley

Directions

  1. Pat the chicken tenders dry with paper towels to remove excess surface moisture, which prevents steaming.
  2. Season the tenders with Diamond Crystal kosher salt, black pepper, garlic powder, cornstarch, and baking powder, tossing until evenly coated.
  3. Arrange the tenders in a single layer in the air fryer basket, leaving space between each piece, and spray generously with avocado oil.
  4. Air fry at 400°F (200°C) for 6 minutes, then flip, spray the other side with oil, and cook for another 5 to 6 minutes until golden and crisp.
  5. While the chicken cooks, melt the butter in a small saucepan over low heat, then add the grated garlic and cook for 1 minute until fragrant but not browned.
  6. Whisk the honey and soy sauce into the melted butter, simmer for 30 seconds, then remove from heat.
  7. Transfer the hot chicken tenders to a large bowl, pour the warm honey butter garlic sauce over them, and toss gently until fully coated. Garnish with parsley and serve immediately.

Notes

  • We highly recommend using Diamond Crystal kosher salt. If you are using fine table salt or Morton's kosher salt, cut the volume in half (use 1/2 teaspoon instead of 1 teaspoon) to avoid over-salting.
  • Baking powder is alkaline, which raises the pH of the chicken surface, breaking down peptide bonds and allowing it to brown and crisp up much faster in the dry heat of the air fryer.
  • Keep a close eye on the garlic in the saucepan. Garlic contains high amounts of natural sugars that burn incredibly fast; cook it over low heat just until fragrant, about 60 seconds, before adding the honey.
  • Once coated in the honey butter glaze, the tenders will lose their crispness after a day in the fridge as the moisture from the sauce migrates into the breading. Store leftovers in an airtight container and reheat in the air fryer at 350°F to restore some crunch.
