Ingredients

  • 1 lb fresh okra, washed and thoroughly dried
  • 1 tbsp olive oil (or avocado oil)
  • 3 tbsp yellow cornmeal

  • 1/2 tsp smoked paprika
  • 1/2 tsp Diamond Crystal kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 1/8 tsp cayenne pepper (optional, for heat)

Directions

  1. Slice the thoroughly dried okra into 1/2-inch rounds, discarding the stem ends.
  2. Place the sliced okra in a medium bowl, drizzle with the oil, and toss until every piece is lightly coated.
  3. In a small bowl, whisk together the cornmeal, cornstarch, garlic powder, smoked paprika, kosher salt, black pepper, and cayenne pepper.
  4. Sprinkle the dry spice mixture over the oiled okra, tossing vigorously until the rounds are evenly coated.
  5. Preheat your air fryer to 400°F (200°C) for 3 minutes.
  6. Spread the coated okra in a single layer in the air fryer basket, ensuring they are not piled on top of each other. Cook in batches if necessary.
  7. Air fry at 400°F for 12 to 15 minutes, shaking the basket halfway through, until the okra is golden brown and crispy.

Notes

  • I highly recommend using Diamond Crystal kosher salt for this recipe. If you only have standard table salt or fine sea salt on hand, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid an over-salted batch.
  • The addition of cornstarch is non-negotiable here. While cornmeal provides that classic Southern grit and crunch, cornstarch acts as a moisture-magnet, absorbing any residual surface water and gelatinizing under high heat to form an ultra-crispy, protective shell.
  • Keep a close eye on the air fryer during the last 3 minutes of cooking. Because cornmeal can transition from perfectly toasted to bitter and burnt in a matter of seconds, shake the basket frequently toward the end to ensure even heat distribution.
  • Like most air-fried vegetables, this okra is best enjoyed immediately. After a day in the fridge, the cornmeal coating will naturally soften as it absorbs moisture from the vegetable, though you can easily revive its crunch with a quick re-fry.
