Directions
- Bring a medium pot of water to a boil and add 1 tablespoon of Diamond Crystal kosher salt.
- Drop the raw shrimp into the boiling water and cook for 2 to 3 minutes until they turn pink and opaque.
- Tap your tongs against your hip, fish the shrimp out, and plunge them immediately into a bowl of ice water to stop the cooking process.
- Drain the cooled shrimp thoroughly and pat them dry with paper towels so the dressing clings to them.
- In a large bowl, whisk together the olive oil, fresh lime juice, sea salt, and black pepper.
- Add the diced avocado, cucumber, red onion, and cooled shrimp to the bowl, then gently fold to combine without mashing the avocado.
- Garnish with fresh cilantro and serve immediately. </
Notes
- Always use Diamond Crystal kosher salt; if you are using Morton's kosher salt, cut the volume in half (use 1.5 teaspoons instead of 1 tablespoon) to avoid over-salting.
- The citric acid in fresh lime juice denatures the enzymes in avocado that cause enzymatic browning, keeping your salad vibrant green for hours.
