Ingredients

  • 2 large flour tortillas (10-inch, preferably high-fiber wraps for strength)
  • 1 cup cooked chicken breast, shredded and chilled
  • 1 large ripe Hass avocado
  • 2 tbsp plain Greek yogurt (Fage 2% is highly recommended)
  • 1 tsp fresh lemon juice
  • 1/2 tsp Diamond Crystal kosher salt
  • 1/4 tsp freshly cracked black pepper
  • 1/2 cup baby spinach, washed and thoroughly spun dry
  • 1/4 cup seedless cucumber, thinly sliced

Directions

  1. Slice the Hass avocado in half, discard the pit, and scoop the flesh into a small bowl.
  2. Mash the avocado with the lemon juice, Diamond Crystal kosher salt, and black pepper using a fork until your forearms ache and the mixture is mostly smooth but slightly chunky.
  3. Lay your flour tortillas flat on a clean cutting board.
  4. Spread the mashed avocado evenly across the bottom two-thirds of each tortilla, leaving a one-inch border around the edges.
  5. In a separate bowl, toss the chilled shredded chicken with the Greek yogurt until the chicken is lightly coated.
  6. Layer the baby spinach and sliced cucumber directly over the mashed avocado barrier.
  7. Spoon the yogurt-bound chicken mixture on top of the greens.
  8. Fold the left and right sides of the tortilla inward by about one inch, then roll tightly from the bottom up, tucking the filling as you go.
  9. Slice diagonally with a sharp serrated knife and serve immediately.

Notes

  • Salt Conversion: I use Diamond Crystal kosher salt. If you are using fine table salt, cut the measurement in half to 1/4 teaspoon to avoid over-salting.

Storage and Reheating

Do not freeze this wrap.

The delicate water-rich cells of the avocado and cucumber will rupture upon freezing. When thawed, they will release all their moisture, turning your lunch into a sad, watery mess.

Instead, store any leftover wraps in the refrigerator wrapped tightly in parchment paper or beeswax wrap. This keeps the air out and maintains the tight roll.
