Ingredients
- 1 can (15 oz / 425g) chickpeas, drained and rinsed
- 1 tablespoon extra virgin olive oil
- 1/2 teaspoon Diamond Crystal kosher salt
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/8 teaspoon cayenne pepper
Directions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Roll the drained chickpeas between two clean kitchen towels, applying gentle pressure with your palms to loosen and rub the skins off.
- Discard the loose skins, then place the peeled chickpeas onto the prepared baking sheet, leaving plenty of space between them.
- Use the flat bottom of a heavy drinking glass or a measuring cup to firmly press down on each chickpea until it flattens into a thin disc.
- Drizzle the olive oil over the smashed chickpeas, then sprinkle evenly with the Diamond Crystal kosher salt, smoked paprika, garlic powder, and cayenne.
- Bake for 22 to 25 minutes, rotating the pan halfway through, until the edges are golden brown and shatteringly crisp to the touch.
- Let them cool completely on the baking sheet for 10 minutes; they will continue to crisp up as they sit. </
Notes
- We highly recommend using Diamond Crystal kosher salt; if you are using standard table salt or fine sea salt, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid over-salting.
- Olive oil acts as a heat conductor on the chickpea's surface, accelerating the Maillard reaction and helping the oil-soluble flavor compounds in the paprika and garlic powder bloom beautifully.
- Keep a close eye on the oven during the last 5 minutes of baking; because these chips are pressed so thin, the transition from perfectly golden to bitter and burnt happens in a flash.
- While these chips are best enjoyed fresh, any leftovers must be stored in an airtight container with a piece of parchment paper to absorb residual humidity, though they will naturally lose some of their shatter-crisp texture after 24 hours.

Do not freeze these.

To store them, place them in a glass jar or airtight container with a clean paper towel tucked inside. The paper towel acts as a moisture magnet, pulling any ambient humidity away from your chips.
