  • 100g sweet chili sauce
  • 2 tbsp Sriracha
  • 1 tbsp honey
  • 2 green onions, finely sliced for garnish

Directions

  1. In a medium bowl, combine the cubed chicken, Greek yogurt, kosher salt, garlic powder, and smoked paprika. Stir until every piece of chicken is evenly coated, then cover and marinate in the fridge for at least 30 minutes.
  2. While the chicken marinates, whisk together the mayonnaise, sweet chili sauce, Sriracha, and honey in a small bowl until smooth. Set aside half of this glaze in a separate dish for serving later.
  3. Thread the marinated chicken pieces tightly onto metal skewers, leaving a small gap at both ends. If using wooden skewers, ensure they have soaked in water for at least 30 minutes to prevent burning.

  • Salt Conversions: This recipe specifies Diamond Crystal kosher salt. If you are using Morton's kosher salt or fine table salt, cut the volume by half to prevent an oversalted disaster.
