  • 1/4 cup sweet chili sauce
  • 1 tbsp Sriracha
  • 1 tsp honey
  • 2 green onions, thinly sliced (for garnish)
  • 1 tsp toasted sesame seeds (for garnish)

Directions

  1. Pat the shrimp completely dry with paper towels to remove excess surface moisture.
  2. In a medium bowl, whisk together the cornstarch, garlic powder, onion powder, kosher salt, and black pepper.
  3. Dredge each shrimp in the cornstarch mixture, shaking off any excess. Tap the tongs against your hip to shake off the extra dust.
  4. Preheat your air fryer to 400°F (200°C) for 5 minutes to build up thermal mass.
  5. Arrange the shrimp in a single layer in the air fryer basket, ensuring they do not touch.
  6. Spray the shrimp generously with cooking oil spray until no dry white spots of cornstarch remain.
  7. Air fry at 400°F (200°C) for 4 minutes, then flip the shrimp, spray any dry spots with oil, and cook for another 3 to 4 minutes until golden and crispy.

Notes

  • For the best salt distribution, I highly recommend using Diamond Crystal kosher salt. If you only have standard table salt, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid an over-salted batch.
  • Kewpie mayonnaise is the secret to an ultra-creamy sauce. Its high egg-yolk content creates a more stable emulsion that won't break or turn greasy when tossed with the hot, air-fried shrimp.
  • Do not crowd the air fryer basket! If the shrimp touch, they will steam instead of fry, leaving you with a gummy, wet coating. Cook in two separate batches if your basket is small.
