Ingredients

  • 12 lasagna noodles (oven-ready or boiled)
  • 1 lb ground beef (80/20 blend)
  • 8 slices thick-cut bacon, chopped

  • 2 cloves garlic, minced
  • 1.5 cups barbecue sauce (your favorite smoky brand)
  • 1 tsp Diamond Crystal kosher salt
  • 1/2 tsp freshly cracked black pepper
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 3 cups sharp cheddar cheese, shredded (divided)
  • 1 cup low-moisture mozzarella cheese, shredded
  • Dill pickle slices (for serving)

Directions

  1. Cook the chopped bacon in a large skillet over medium heat until crispy. Use a slotted spoon to fish out the bacon and transfer it to a paper-towel-lined plate, leaving the bacon fat in the skillet.
  2. Add the ground beef and diced onion to the skillet with the bacon fat. Cook, breaking up the meat with a wooden spoon, until the beef is browned and the onion is translucent.
  3. Drain any excess grease from the skillet, then stir in the minced garlic, Diamond Crystal kosher salt, black pepper, and 1 cup of the barbecue sauce. Simmer for 5 minutes, then remove from heat.
  4. In a separate saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute to remove the raw flour taste.
  5. Slowly pour in the milk while whisking constantly until your wrist aches to prevent lumps. Cook until the sauce thickens and bubbles, about 3-4 minutes. Remove from heat and stir in 2 cups of the shredded cheddar cheese until smooth.
  6. Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish.
  7. Spread a thin layer of the remaining barbecue sauce on the bottom of the dish. Place 3 or 4 lasagna noodles on top.
  8. Spread one-third of the beef mixture over the noodles, drizzle with some of the cheddar cheese sauce, and sprinkle with one-third of the crispy bacon. Repeat the layers twice more (noodles, beef, cheese sauce, bacon).
  9. Top the final layer of noodles with the remaining cheese sauce, the remaining 1 cup of cheddar, and the mozzarella cheese.
  10. Cover the dish with foil (spray the underside of the foil with oil so the cheese doesn't stick) and bake for 30 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown. Let it rest for 15 minutes before slicing. Top with dill pickle slices before serving.

  • Salt Conversion: I use Diamond Crystal kosher salt. If you are using fine table salt, cut the measurement in half to 1/2 teaspoon to avoid an oversalted dish.
