A smoky, crunchy BBQ Chicken Chopped Salad packed with crisp romaine, sweet corn, black beans, and a creamy, emulsified BBQ ranch dressing that actually stays crisp.

BBQ Chicken Chopped Salad
Why This Recipe Works:
  • Cooling the chicken completely prevents residual heat from wilting the delicate romaine lettuce.
  • Whisking the BBQ sauce directly into the ranch dressing emulsifies the oils, ensuring even distribution without clumping.
  • Layering the heavy ingredients at the bottom and adding the crunch elements last preserves the salad's structural integrity.

I still remember the humid July afternoon I tried to recreate my favorite restaurant chopped salad at home, only to end up with a soggy, lukewarm pile of sadness that tasted mostly like wet cardboard.

It was tragic.

I had tossed the steaming, freshly grilled chicken directly onto the cold romaine, which immediately wilted the delicate greens on a molecular level. The thermal mass of the hot meat trapped steam under the heavy dressing, turning what should have been a crisp, refreshing lunch into a watery, limp disaster.

Worse, the store-bought barbecue sauce clumped in sticky, sugary globs instead of coating the ingredients.

To fix this, we let the chicken cool completely before slicing, and we whisk the BBQ sauce directly into a creamy buttermilk base to create a cohesive dressing. This ensures the dressing clings to every single leaf rather than pooling at the bottom of your bowl.

Bear with me here.

If you have leftover chicken from making The Best Crockpot BBQ Chicken, this is the absolute perfect way to use it up.

While I love a classic Turkey Bacon Lettuce Tomato Salad, there is something about the smoky sweetness of barbecue sauce that makes this chopped salad feel like a true summer cookout in a bowl.

It is hands down my favorite weekday lunch.

Ingredients

  • 2 cups cooked chicken breast, shredded or cubed (cooled completely)
  • 1 head romaine lettuce, chopped into bite-sized pieces
  • 1 cup canned black beans, rinsed and drained
  • 1 cup sweet corn kernels (fresh, frozen thawed, or canned)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely diced
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/2 cup tortilla strips
  • 1/2 cup ranch dressing
  • 1/4 cup barbecue sauce
  • 1/2 tsp Diamond Crystal kosher salt (approx. 1.5g)

Directions

  1. In a small bowl, whisk together the ranch dressing and barbecue sauce until completely smooth and emulsified.
  2. In a large mixing bowl, combine the chopped romaine lettuce, cooled chicken, black beans, sweet corn, cherry tomatoes, and diced red onion.
  3. Drizzle the BBQ ranch dressing over the salad ingredients.
  4. Gently toss the salad using large tongs until every ingredient is evenly coated with the dressing.
  5. Sprinkle the shredded cheddar cheese and tortilla strips over the top just before serving to maintain their crunch.

Notes

  • We highly recommend using Diamond Crystal kosher salt; if you are using Morton's kosher salt, cut the volume by half (use 1/4 tsp instead of 1/2 tsp) to avoid over-salting.
  • Cooling the chicken completely is essential because hot chicken will break the emulsion of the ranch dressing and melt the cheddar cheese prematurely, releasing unwanted moisture.
  • If you are charring your corn in a skillet, keep a close eye on the heat; corn contains high levels of natural sugars that can go from beautifully caramelized to bitter and burnt in under thirty seconds.
  • Once dressed, the romaine will begin to break down and lose its structural integrity within two hours, so only dress what you plan to eat immediately.
  • We tested this with three different store-bought ranch brands, and Hidden Valley failed our texture test because it was too watery to hold the heavy BBQ sauce; stick to Ken's Steak House or make your own.
  • For a fun twist, you can toss in some crushed corn chips or even leftovers from a Frito Cowboy Cabbage Salad to add an extra layer of salty crunch.

Serving Suggestions

To get the absolute most out of this vibrant salad, serve it in chilled bowls alongside complementary textures and flavors that round out the meal.

  • Serve in chilled wooden bowls to keep the greens exceptionally crisp.
  • Pair with a warm slice of skillet cornbread slathered in honey butter.
  • Garnish with fresh cilantro leaves and a generous squeeze of lime juice.
  • Serve alongside a cold glass of sweet tea or fresh lemonade.
  • Add sliced avocado right before serving for a rich, buttery texture.

Storage and Reheating

If you have leftovers, store the undressed salad components and the BBQ ranch dressing in separate airtight containers in the fridge. The dry ingredients will stay remarkably crisp for up to three days this way.

Once the salad is dressed, however, the clock starts ticking.

The salt in the dressing will draw out water from the tomatoes and onions, leaving you with a sad, watery pool by morning. Always dress only what you intend to consume in one sitting.

Do not freeze this.

Freezing will destroy the cellular structure of the lettuce, turning it into mush upon thawing.

Ingredient Substitutes

Need to swap something out? Here are our favorite tested substitutions that won't compromise the flavor profile:

  1. Romaine Lettuce: Swap with chopped iceberg lettuce for maximum crunch, or use shredded green cabbage like in a Mango Slaw.
  2. Black Beans: Pinto beans or kidney beans work beautifully as a direct replacement.
  3. Cheddar Cheese: Monterey Jack, Pepper Jack, or cotija cheese offer a fantastic flavor swap.
  4. Chicken: Grilled tofu, chickpeas, or leftover turkey make excellent protein alternatives.
  5. Tortilla Strips: Crushed corn chips or even toasted pepitas provide that essential crunch.

Gather your ingredients, tap those tongs against your hip twice for good luck, and enjoy a bowl of pure, crunchy satisfaction that actually stays crisp.
