Bbq Chicken Coleslaw Wraps
A quick, satisfying lunch featuring juicy shredded BBQ chicken, a crisp, tangy homemade coleslaw, and fresh cilantro wrapped in a soft flour tortilla.
- Salting the cabbage draws out excess moisture, ensuring the slaw stays incredibly crunchy instead of turning soggy.
- A thin layer of mayonnaise on the tortilla creates a fat barrier that prevents the wet BBQ chicken from softening the wrap.
- Using high-quality flour tortillas with strong gluten elasticity prevents tearing when rolling tightly.
Last July, I stood in my sweltering kitchen, desperately trying to assemble lunch while my toddler banged a metal whisk against my shin. I had some leftover grilled chicken, a bottle of cheap barbecue sauce, and a bag of pre-shredded cabbage that was dangerously close to turning into swamp water.
It was a disaster.
The tortilla tore instantly under the weight of the soggy, watery cabbage. Barbecue sauce dripped down my forearms, and the whole wrap collapsed into a sad, mushy heap on my cutting board.
Think about this in terms of physics: when you mix raw cabbage with salt and dressing too early, osmotic pressure draws out the vegetable's cellular water. This moisture pooling is what ruins a wrap, turning your soft flour tortilla into a soggy paper towel within minutes. I tested this with four different brands of tortillas, and the thinner ones failed every single test because they lacked the gluten structure to withstand that sudden moisture release.
The simple fix is a two-step defense system: we salt and drain the cabbage first to collapse its cellular walls. Then, we paint the tortilla with a thin barrier of mayonnaise. This fat-based layer acts as a hydrophobic shield, keeping the barbecue sauce from migrating into the starch matrix of the wrap.

Ingredients
- 2 cups cooked chicken breast, shredded (or leftover from making Crispy Air Fryer Chicken Wings)
- 1/2 cup barbecue sauce
- 3 cups green cabbage, shredded
- 1/2 cup carrots, shredded
- 1 tsp Diamond Crystal kosher salt (use 1/2 tsp if using fine table salt)
- 1/4 cup mayonnaise
- 1 tbsp apple cider vinegar
- 1 tbsp honey
- 1/4 cup fresh cilantro, chopped
- 4 large flour tortillas (10-inch)
Directions
- Toss the shredded cabbage and carrots with the Diamond Crystal kosher salt in a colander. Let it sit for 10 minutes to draw out excess water, then rinse with cold water and squeeze dry in a clean kitchen towel.
- In a medium bowl, whisk together the mayonnaise, apple cider vinegar, and honey. Fold in the dried cabbage, carrots, and chopped cilantro to create a crisp, tangy slaw. (If you prefer a spicier kick, you can swap this for our Spicy Jalapeño Coleslaw).
- In a separate bowl, mix the shredded cooked chicken with your favorite barbecue sauce until fully coated. Warm the chicken slightly if it was refrigerated.
- Lay a flour tortilla flat on a clean cutting board. Spread a thin layer of plain mayonnaise over the surface to create a moisture barrier.
- Place a generous scoop of the BBQ chicken in the center of the tortilla, then top with a handful of the crunchy coleslaw.
- Fold the sides of the tortilla inward, then roll tightly from the bottom up. Slice in half diagonally and serve immediately.
Notes
- I highly recommend using Diamond Crystal kosher salt for salting the cabbage; if you only have Morton's kosher salt or fine table salt, cut the volume by half (use 1/2 teaspoon) to avoid an aggressively salty slaw.
- Salting the cabbage triggers osmosis, drawing out water from the plant cells before it can ruin your wrap. This process alters the pectin structure, leaving you with a cabbage texture that stays remarkably crisp even after hours in the wrap.
- Do not over-warm your BBQ chicken before assembly. If the chicken is steaming hot, it will create condensation inside the wrapped tortilla, instantly defeating our moisture barrier and causing the wrap to tear.
- While these wraps are best enjoyed fresh, you can store the components separately in the fridge for up to 3 days. Once assembled, the tortilla will begin to soften after about 4 hours, so pack the slaw and chicken in separate containers if prepping for a work lunch.
Serving Suggestions
Pair these wraps with a refreshing, cold side dish to balance the smoky sweetness of the barbecue sauce beautifully.
- A crisp, cold Watermelon Feta Salad makes an incredible summer side.
- Serve alongside crunchy potato chips or sweet potato fries for a classic picnic feel.
- Add a side of pickled jalapeños if you want to cut through the rich, sweet barbecue flavor.
- Plate with a wedge of lime to squeeze over the wrap right before taking a bite.
Storage and Reheating
Do not freeze these wraps.
The cabbage will turn into a mushy, watery mess upon thawing, and the mayonnaise in the slaw dressing will split.
If you have leftovers, store the BBQ chicken and the coleslaw in separate airtight containers in the refrigerator. They will keep beautifully for up to three days, allowing you to assemble fresh wraps on demand.
To reheat, gently warm the BBQ chicken in a skillet over medium-low heat until heated through. Assemble the wrap with cold slaw right before serving to maintain that crucial temperature and texture contrast.
Ingredient Substitutes
If you need to make some adjustments based on what is in your pantry, here are a few easy swaps:
- Chicken: Swap the shredded chicken breast for pulled pork, smoked brisket, or even shredded jackfruit for a vegetarian alternative.
- Tortillas: Use spinach wraps, whole wheat tortillas, or gluten-free wraps (just ensure they are warmed slightly first so they fold without cracking).
- Cilantro: If you are one of those people for whom cilantro tastes like soap, swap it out for fresh flat-leaf parsley or thinly sliced green onions.
- Coleslaw: If you want a different flavor profile, try our Sweet & Spicy Pickle Slaw for an extra punch of acidity.
I hope these wraps bring a little bit of easy, stress-free joy to your kitchen table. They have saved my sanity on busy weekdays more times than I can count, and I think they might do the same for you. Let me know how they turn out, and don't forget to tap your tongs against your hip twice for good luck before you start cooking!
