Directions

  1. Preheat a large cast-iron skillet or griddle over high heat until it is smoking hot, about 5 minutes. While the pan heats, spread the softened butter onto the cut sides of the brioche buns.
  2. Place the buttered buns cut-side down in the hot, dry skillet. Toast for 1-2 minutes until golden brown and crispy, then set aside.
  3. Ensure the skillet is screaming hot. Do not add any oil or butter to the pan; we need dry contact to create the crust.
  4. Place two beef balls in the skillet, leaving ample space between them. Immediately press down with a heavy metal spatula (use a second spatula or a wooden spoon to apply extra downward pressure) until the patties are paper-thin, especially around the edges.
