Directions

  1. In a medium bowl, beat the softened cream cheese, powdered sugar, and cornstarch until smooth and spreadable.
  2. Spread about 2 tablespoons of the cream cheese mixture onto four slices of brioche, leaving a small border around the edges.
  3. Press the fresh blueberries gently into the cream cheese layer, then top with the remaining four slices of bread to make sandwiches.
  4. In a shallow dish, whisk together the eggs, whole milk, heavy cream, vanilla extract, ground cinnamon, and kosher salt until fully combined.
  5. Melt the unsalted butter in a large skillet over medium-low heat.
  6. Dip each sandwich into the egg custard for 10 seconds per side, allowing the bread to absorb the liquid without getting oversaturated.
  7. Place the sandwiches in the hot skillet and cook for 4 to 5 minutes per side, until golden brown and the cream cheese is warm and melted.
  8. Serve immediately with maple syrup and extra fresh blueberries.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, cut the measurement in half (use 1/4 teaspoon) to avoid an overly salty custard.
  • The addition of cornstarch to the cream cheese is crucial because it binds to the water molecules, preventing starch gelatinization from breaking down and causing the filling to run.
  • Do not rush the cooking process over high heat; cooking on medium-low ensures the heat penetrates to the center to melt the cheese before the exterior butter burns.
  • Leftovers stored in the fridge will lose their crispy exterior as the bread absorbs the moisture from the filling, turning slightly soft after 24 hours.
  • If you can't find brioche, challah is an excellent substitute, but avoid standard sandwich bread as it lacks the protein matrix to hold up to the heavy stuffing.
