Breaded Air Fryer Chicken Tenders
A crispy, golden, and incredibly juicy air fryer chicken tenders recipe that actually stays crunchy. No deep frying required!
- Cornstarch barrier prevents escaping steam from making the breading soggy.
- Panko breadcrumbs provide maximum surface area for a shatteringly crisp crunch.
- High-heat air frying mimics deep frying without saturating the meat in oil.
I still remember the evening I stood over my kitchen counter, tears of absolute frustration welling up as I peeled a gummy, half-cooked sheet of breading off a sad strip of chicken.
It was supposed to be a quick Tuesday dinner.
The culprit was a classic physics failure: the steam escaping from the rapidly heating chicken meat was trapped beneath a heavy, wet batter, completely destroying the delicate protein matrix of the egg wash and turning the breadcrumbs into a soggy, sliding paste.
I tested this with six different breading methods until my forearms ached from shaking the air fryer basket.
The ultimate solution lies in a light cornstarch dredge, which acts as a moisture barrier, followed by panko breadcrumbs sprayed generously with oil to mimic the thermal mass of deep frying.
It is hands down the crunchiest tender you will ever make.

Ingredients
- 1 lb (450g) chicken tenderloins
- 1 tsp Diamond Crystal kosher salt
- 1/2 tsp freshly cracked black pepper
- 1/2 cup cornstarch
- 2 large eggs, beaten
- 1 cup Panko breadcrumbs
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Avocado oil spray
Directions
- Pat the chicken tenderloins completely dry with paper towels. Season them evenly with Diamond Crystal kosher salt and black pepper.
- Set up your dredging station with three shallow bowls: one with cornstarch, one with the beaten eggs, and one with the panko breadcrumbs mixed with garlic powder and smoked paprika.
- Dredge each tender in the cornstarch, shaking off any excess. Dip into the egg wash, ensuring it is fully coated, then press firmly into the seasoned panko breadcrumbs until completely covered.
- Preheat your air fryer to 400°F (200°C) for 5 minutes.
- Arrange the breaded tenders in a single layer in the air fryer basket, leaving space between each. Spray the tops generously with avocado oil spray.
- Air fry at 400°F (200°C) for 6 minutes, then flip the tenders, spray the other side with oil, and cook for an additional 5 to 6 minutes until golden brown and the internal temperature reaches 165°F (74°C).
Notes
- Always use Diamond Crystal kosher salt; if you only have Morton's kosher salt or fine table salt, cut the volume in half to avoid over-salting.
- The cornstarch dredge is non-negotiable because it binds to the chicken's surface proteins, absorbing residual moisture and creating a dry surface that the egg wash can cling to.
- Do not crowd the air fryer basket; if the tenders touch, steam will build up in those pockets, leaving you with patchy, wet spots instead of an even, golden crunch.
- Leftover tenders will lose their signature crunch in the fridge as the breading absorbs moisture from the meat, but they can be easily revived to their original glory in a 350°F air fryer for 3-4 minutes.
Serving Suggestions
These crispy tenders are incredibly versatile and pair beautifully with fresh, vibrant sides to balance out the rich crunch of the panko coating.
- Serve these alongside a crisp, tangy Coleslaw Recipe to cut through the richness of the breading.
- Pair with a side of Air Fryer Roasted Potatoes for an easy, completely air-fried weeknight meal.
- Drizzle with hot honey or serve with a side of ranch dressing for dipping.
- Slice them up and toss them over a fresh green salad for a quick lunch.
Storage and Reheating
Store any leftovers in an airtight container lined with a paper towel.
The paper towel is a crucial trick here because it absorbs any condensation that forms as the chicken cools, preventing the panko from turning into a complete mushy disaster in the fridge.
They will keep safely for up to three days, though the breading will naturally soften over time.
When you are ready to eat, absolutely do not use the microwave unless you enjoy rubbery chicken. Instead, pop them back into the air fryer at 350°F for about four minutes to crisp them right back up.
Ingredient Substitutes
If you need to swap out some ingredients based on what is in your pantry, here are the best alternatives:
- Chicken Tenderloins: You can use chicken breasts sliced into 1-inch strips, though they may cook slightly faster.
- Panko Breadcrumbs: Regular breadcrumbs work, but you will lose that signature shatteringly crisp texture.
- Avocado Oil Spray: Any high-smoke-point oil spray like canola or grapeseed oil works perfectly; avoid aerosol cans with propellants like PAM, which can damage your air fryer's non-stick coating over time.
- Flavor Variations: If you want a different flavor profile, check out my Healthy Buffalo Ranch Baked Chicken Strips.
These tenders have completely replaced frozen bag options in my house, and once you hear that first crunch, you'll never look back either.
