  • 4 tbsp unsalted butter, cold and cubed
  • 1 tbsp honey
  • 3 cups cooked jasmine rice
  • 1 cup celery, thinly sliced
  • 1 cup carrots, shredded
  • 1/2 cup blue cheese crumbles
  • 1/2 cup green onions, sliced
  • Ranch or blue cheese dressing for drizzling

Directions

  1. Pat the chicken cubes completely dry with paper towels to ensure maximum crispiness.
  2. In a medium bowl, toss the chicken with olive oil, cornstarch, garlic powder, onion powder, kosher salt, and black pepper until evenly coated.
  3. Preheat your air fryer to 400°F (200°C). Arrange the chicken in a single layer, ensuring the pieces do not touch so they crisp up instead of steaming.
  4. Air fry for 10 to 12 minutes, shaking the basket halfway through, until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
  5. While the chicken cooks, make the sauce. Heat the Frank's RedHot in a small saucepan over low heat. Once warm, whisk in the cold butter one cube at a time until fully melted and emulsified. Stir in the honey.
  6. Transfer the cooked chicken to a large bowl, pour the warm buffalo sauce over it, and toss until every piece is gloriously coated.
  7. Assemble the bowls by layering a base of cooked rice, then top with the buffalo chicken, sliced celery, shredded carrots, blue cheese crumbles, and green onions. Drizzle with dressing and serve immediately.

Notes

  • I highly recommend using Frank's RedHot Original Cayenne Pepper Sauce for that authentic, sharp tang. If you use a different brand, note that sodium levels vary wildly, so adjust your salt accordingly.
  • Whisking cold butter into warm hot sauce off the heat creates a stable emulsion. The milk solids in the cold butter coat the fat droplets, preventing them from coalescing and splitting into an oily mess.
  • Do not crowd your air fryer basket! If the chicken pieces touch, they will trap steam, resulting in a soggy, rubbery coating instead of a crisp exterior. Cook in batches if necessary.
