Ingredients
- 2 cups shredded rotisserie chicken (fished out and shredded by hand)
- 8 oz Philadelphia cream cheese, softened
- 1/2 cup Frank's RedHot original cayenne pepper sauce
- 1/2 cup sour cream
- 1 cup freshly shredded Monterey Jack cheese, divided
- 1 cup freshly shredded sharp cheddar cheese, divided
- 1/2 tsp Diamond Crystal kosher salt (or 1/4 tsp fine table salt)
- 1/4 tsp garlic powder
Directions
- Preheat your oven to 375°F (190°C).
- In a medium mixing bowl, combine the softened cream cheese, Frank's RedHot sauce, sour cream, kosher salt, and garlic powder, whisking vigorously until completely smooth.
- Fold in the hand-shredded rotisserie chicken and half of both the Monterey Jack and sharp cheddar cheeses until the mixture is evenly coated.
- Transfer the mixture into an 8-inch cast-iron skillet or baking dish, smoothing the top with a spatula.
- Scatter the remaining Monterey Jack and cheddar cheeses evenly over the top of the dip.
- Bake for 20 minutes until the edges are bubbling vigorously and the cheese on top is completely melted and lightly golden.
Notes
- Brand Recommendation: I highly recommend using Philadelphia brand cream cheese and Diamond Crystal kosher salt. If you only have fine table salt, cut the measurement in half to avoid over-salting.
- The Science of Melt: Monterey Jack has a high moisture content and a relatively young age, meaning its protein structure is highly elastic and melts beautifully without releasing excess oil.
- Workflow Warning: Keep a close eye on the oven during the last 5 minutes of baking. If you decide to use the broiler to brown the cheese, do not walk away, as the high fat content can burn in a matter of seconds.
