Think about this in terms of physics. The oil creates a barrier that traps steam inside while frying the outer skin of the tortilla to a perfect golden brown.

The secret lies in the filling emulsion.

By mixing warm shredded chicken with cream cheese, you create a stable protein matrix. This clings to the meat instead of leaking out.

Ingredients

  • 3 cups shredded cooked chicken breast
  • 4 oz cream cheese, softened
  • 1/2 cup Frank's RedHot original cayenne pepper sauce
  • 1 1/2 cups shredded Mexican blend cheese
  • 1/2 tsp Diamond Crystal kosher salt
  • 12 corn tortillas
  • 2 tbsp olive oil (for brushing)

Directions

  1. Preheat your oven to 425°F (218°C) and line a large baking sheet with parchment paper.
  2. In a medium bowl, vigorously stir together the softened cream cheese, Frank's RedHot, and Diamond Crystal kosher salt until smooth.
  3. Fold in the shredded chicken and Mexican blend cheese until the mixture is fully cohesive.
  4. Wrap the corn tortillas in a damp paper towel and microwave for 40 seconds until warm and pliable.
  5. Spoon about 2-3 tablespoons of the chicken filling down the center of each tortilla, roll tightly, and place seam-side down on the prepared baking sheet.
  6. Lightly brush the tops and sides of each rolled taquito with olive oil using a pastry brush.
  7. Bake for 18 to 20 minutes until the edges are golden brown and the shells are visibly crispy.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, cut the measurement in half (use 1/4 teaspoon instead of 1/2 teaspoon) to avoid an over-salted filling.
  • Cream cheese is essential here because its high fat content prevents the acid in the hot sauce from breaking down the chicken's protein matrix, keeping the filling beautifully emulsified.
  • Keep a close eye on the oven during the last 3 minutes of baking; the cheese at the exposed ends can go from perfectly caramelized to bitter and burnt very quickly.
  • After a day in the fridge, the corn tortillas will naturally absorb moisture from the filling and lose their crunch, but they can be easily revived to their original shatteringly crisp state in an air fryer.

Storage and Reheating

Store any leftovers in an airtight container in the fridge. They will keep well for up to three days.

Never use the microwave to reheat these.

Instead, pop them into an air fryer at 375°F for 4 to 5 minutes. You can also lay them on a wire rack set inside a baking sheet and bake at 400°F for 8 minutes. This allows the hot air to circulate completely around the shells. It evaporates any absorbed moisture and restores that glorious, noisy crunch.

Ingredient Substitutes

If you need to swap things out based on what is in your pantry, here are the easiest adjustments.

  1. Chicken: You can easily swap the shredded chicken for leftover turkey or even shredded jackfruit for a vegetarian option.
  2. Tortillas: Flour tortillas can be used instead of corn, though they will yield a softer, more chimichanga-like texture.
  3. Hot Sauce: If Frank's isn't your favorite, any cayenne-based hot sauce will work, but avoid super-watery vinegar sauces.
