A fresh, vibrant Caprese Chicken Salad featuring juicy chicken breast, ripe cherry tomatoes, creamy fresh mozzarella, and a rich, homemade balsamic dressing.

Caprese Chicken Salad
Why This Recipe Works:
  • Pre-salting the tomatoes draws out excess water, concentrating their natural sugars and preventing a soggy salad.
  • Using Dijon mustard in the dressing acts as a natural emulsifier, ensuring the balsamic clings to the chicken instead of pooling at the bottom.
  • Tearing the fresh mozzarella by hand creates craggy, textured edges that trap the dressing beautifully.

On a suffocating Tuesday three summers ago, my apartment AC completely died, leaving me sweating over a cutting board while desperately craving something fresh.

I tore the cheese with my bare hands, letting the milky whey pool on the wooden board.

But here is the problem: most Caprese salads turn into a watery, soggy swamp within ten minutes of tossing.

Bear with me here, because this is pure physics; salt draws moisture out of tomatoes via osmosis, diluting your dressing into a sad, tasteless puddle.

Whisking dressing in a tiny bowl got annoying fast, so I switched to a wide-mouth jar to shake it into a stable emulsion.

Ingredients

  • 2 large chicken breasts (about 500g), grilled and sliced
  • 2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella pearls (or torn fresh mozzarella)
  • 1 cup fresh basil leaves, gently torn
  • 4 cups baby arugula or mixed salad greens
  • 1/2 tsp Diamond Crystal kosher salt
  • 1/4 cup extra virgin olive oil
  • 2 tbsp high-quality balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 clove garlic, grated
  • 1/4 tsp freshly cracked black pepper

Directions

  1. Place the halved cherry tomatoes in a colander set over a bowl. Sprinkle with Diamond Crystal kosher salt and let sit for 10 minutes to drain excess moisture.
  2. In a small jar, combine the balsamic vinegar, Dijon mustard, grated garlic, and black pepper. Slowly drizzle in the olive oil while whisking vigorously to emulsify.
  3. Slice your grilled chicken breasts into bite-sized strips. (If you need a great base, try our grilled chicken salad technique).
  4. In a large mixing bowl, combine the drained tomatoes, sliced chicken, mozzarella pearls, and torn basil.
  5. Drizzle the emulsified balsamic dressing over the mixture and toss gently. Serve immediately over a bed of fresh arugula, or enjoy it as a standalone dish similar to a classic caprese sandwich.

Notes

  • We highly recommend using Diamond Crystal kosher salt; if you are using Morton's or fine sea salt, cut the volume in half (use 1/4 tsp instead of 1/2 tsp).
  • The Dijon mustard in the dressing acts as a natural emulsifier. Its mucilage compounds bind the hydrophobic oil and hydrophilic vinegar together, preventing separation.
  • If grilling the chicken fresh, let it cool completely before tossing. Hot chicken will melt the delicate fresh mozzarella, turning your salad into a gooey, greasy mess.
  • After a day in the fridge, the basil will oxidize and turn black. Store the dressing and fresh basil separately if you plan on making this ahead of time.
  • We tested three brands of balsamic vinegar, and the cheap supermarket store-brand failed every single test because it lacked the necessary viscosity to cling to the chicken.

Serving Suggestions

This salad is incredibly versatile and makes for a stunning centerpiece at any summer gathering. Pair it with light sides or crusty breads to round out the meal.

  • Serve alongside a warm, crusty baguette to soak up the extra balsamic dressing.
  • Pair it with a refreshing cucumber Caprese salad for a double-dose of summer freshness.
  • Spoon it over a bed of warm grains like quinoa or farro for a hearty lunch bowl.
  • Enjoy it next to a slice of savory balsamic bruschetta chicken for a protein-packed dinner.
  • Wash it down with a crisp, chilled glass of Pinot Grigio or Sauvignon Blanc.

Storage and Reheating

Let's be completely honest about leftovers.

This salad is absolutely at its peak the moment it is tossed. The basil is bright green, and the cheese is firm.

If you do have leftovers, pack them into an airtight glass container. Keep in mind that the acid in the balsamic dressing will continue to break down the tomatoes, making them slightly mushy by morning.

Do not attempt to freeze this. The delicate cellular structure of the tomatoes and mozzarella will collapse, leaving you with a watery disaster.

To reheat? Absolutely do not. This is a cold salad, so simply pull it out of the fridge ten minutes before eating to let the olive oil liquefy again.

Ingredient Substitutes

If you don't have everything on hand, don't panic. Here are some easy swaps that work beautifully:

  1. Chicken Breasts: Swap for grilled tofu, chickpeas, or even leftover turkey.
  2. Fresh Mozzarella: If you can't find mozzarella pearls, use a block of low-moisture mozzarella cut into cubes, or even crumbled feta.
  3. Balsamic Vinegar: Red wine vinegar or apple cider vinegar can work, though you'll lose that signature sweet depth.
  4. Arugula: Use baby spinach, romaine, or omit the greens entirely for a pure Caprese experience reminiscent of a marinated tomato salad.

I hope this bright, herbaceous salad brings a little bit of breezy joy to your kitchen, even on the hottest summer days. Tap your tongs against your hip, pour yourself a cold drink, and enjoy the simplicity of good ingredients treated right.
