  3. Spread the softened butter evenly across one side of each sourdough bread slice.
  4. Place two slices of bread, butter-side down, in a cold cast-iron skillet, then layer on the brie slices, caramelized peaches, and fresh thyme.
  5. Top with the remaining bread slices, butter-side up, and cook over medium-low heat for 3 to 4 minutes per side, pressing gently with a spatula until the bread is golden and the brie is completely melted.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have Morton's, cut the volume in half to avoid over-salting.

  • Do not leave the skillet unattended while caramelizing the peaches; the honey can go from beautifully golden to bitter and burnt in a matter of seconds.
