- 8 slices of high-quality deli turkey
- 6 strips of thick-cut bacon, cooked until crispy
- 4 slices of sharp cheddar cheese (Tillamook brand preferred)
- 3 tablespoons of mayonnaise (Duke's brand preferred)
- 1/2 teaspoon of Diamond Crystal kosher salt (or 1/4 teaspoon of Morton's)
Directions
- Preheat a heavy cast-iron skillet over medium-low heat to establish a solid thermal mass.
- Spread a thin, even layer of mayonnaise on one side of each sourdough slice.
- Place the deli turkey slices directly into the dry skillet for 30 seconds per side just to warm them through and release excess moisture, then set aside.
- Place two slices of sourdough, mayonnaise-side down, into the skillet.
- Top each slice of bread with one slice of sharp cheddar cheese, followed by the warmed turkey and crispy bacon.
- Add the remaining cheddar cheese slices on top of the bacon to act as a gooey glue.
- Top with the remaining sourdough slices, mayonnaise-side up, and press down gently with your spatula.
- Cook for 3 to 4 minutes per side, keeping the heat low, until the bread is deeply golden brown and the cheese is fully melted.
Notes
- I highly recommend Tillamook sharp cheddar cheese for its superior meltability. If you are seasoning your spread, use 1/2 teaspoon of Diamond Crystal kosher salt (or 1/4 teaspoon of Morton's kosher salt).
- Mayonnaise is the ultimate secret for the exterior of the bread because the emulsion of oil and egg whites undergoes the Maillard reaction much more evenly than butter, giving you a shatteringly crisp crust.
- Keep your heat strictly at medium-low; if you rush the process on high heat, the bread will blacken and turn bitter before the internal temperature rises enough to melt the cheese.
- Sourdough bread loses its structural integrity after a day in the fridge, so store any leftover turkey and bacon separately and assemble fresh to avoid a soggy mess.
