Directions

  2. Lay out the flour tortillas on a clean work surface and spoon about 2 tablespoons of the cream cheese mixture in a line down the center of each tortilla, leaving a half-inch border at the edges.
  3. Brush the edges of the tortillas with the cornstarch slurry, then roll them up tightly, pressing down on the seam to seal them shut.
  4. Brush the entire exterior of each rolled taquito generously with melted unsalted butter.
  5. In a shallow dish, combine the granulated sugar and ground cinnamon, then roll each buttered taquito in the mixture until fully coated.

  • I highly recommend using Diamond Crystal kosher salt; if you only have Morton's, cut the volume by half and add just a tiny pinch to the cream cheese mixture to balance the sweetness.
  • The addition of sour cream isn't just for tang; its lactic acid helps tenderize the protein matrix of the cream cheese, keeping the filling velvety instead of chalky when heated.
  • Do not skip the cornstarch slurry seal! If the seams aren't glued shut, the steam will force the filling out, and you'll end up with empty shells and a smoky oven.
  • After a day in the fridge, the sugar coating will naturally absorb moisture and lose its crunch; reheat them in an air fryer at 350°F for 3 minutes to restore that shatteringly crisp texture.
