Cheesy Garlic Chicken Rolls
These cheesy garlic chicken rolls are stuffed with tender chicken, gooey mozzarella, and brushed with rich garlic butter. A quick, crowd-pleasing dinner!
- Pre-cooked chicken prevents excess moisture release, keeping the dough perfectly crisp.
- Cream cheese acts as an emulsifier, binding the shredded chicken and preventing cheese blowout.
- Brushing with garlic butter mid-bake allows the oil-soluble garlic compounds to penetrate the crust without burning.
Last October, during a ridiculously loud Sunday football gathering at my apartment, I accidentally dropped my favorite mixing bowl, sending glass shards across the linoleum. My friends were screaming at the television, my dog was barking at the broom, and my hands were shaking as I swept up the mess.
Amidst that absolute chaos, I pulled these golden, bubbling rolls out of the oven, and everyone instantly stopped yelling to grab one, burning their fingers in the process.
I learned the hard way that stuffing raw chicken into dough is a recipe for soggy disaster. The moisture from the meat releases as it cooks, turning the interior dough into a gummy, unappetizing paste while the cheese completely escapes. I tested this with three different dough brands, and the generic store-brand failed every single test because it tore apart under the steam pressure. Bear with me here, because the physics of this is actually quite simple.
The simple fix is using pre-cooked, shredded chicken tossed in a rich cream cheese base. This binds the filling, while a tight tuck-and-roll method prevents the mozzarella from leaking. Baking them at a high temperature gelatinizes the starches in the dough quickly, creating a crisp outer crust that locks in the steam. If you love the flavor profile of our Cheesy Garlic Chicken Wraps, you will absolutely adore this baked version.
Trust me, you can absolutely do this tonight.

Ingredients
- 2 cups shredded cooked chicken
- 4 oz cream cheese, softened
- 1/2 tsp Diamond Crystal kosher salt
- 1/2 tsp garlic powder
- 1 cup shredded mozzarella cheese
- 1 can (8 oz) refrigerated crescent roll dough
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp freshly chopped parsley
Directions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix the shredded chicken, softened cream cheese, kosher salt, garlic powder, and half of the mozzarella until fully combined.
- Unroll the crescent dough and separate it into triangles.
- Place a generous spoonful of the chicken mixture and a pinch of the remaining mozzarella at the wide end of each dough triangle.
- Carefully roll the dough up, tucking the corners in tightly to seal the filling inside.
- Place the rolls seam-side down on the prepared baking sheet.
- In a small bowl, combine the melted butter and minced garlic, then brush half of it over the rolls.
- Bake for 15 to 20 minutes, brushing with the remaining garlic butter during the last 5 minutes, until the rolls are golden brown and bubbling. Garnish with fresh parsley before serving.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have Morton's or fine table salt, cut the measurement in half to avoid an over-salted filling.
- Cream cheese acts as a stabilizer for the mozzarella. Its high fat and protein matrix prevents the mozzarella from breaking down into an oily pool during baking.
- Keep a close eye on the garlic butter. Minced garlic burns easily at high temperatures, which is why we brush the second half on during the final five minutes of baking.
- After a day in the fridge, the crescent dough will lose its crispness and absorb moisture from the chicken. Reheat them in an oven or air fryer rather than a microwave to restore that flaky texture.
Serving Suggestions
Serve these warm while the cheese is still stretchy. They pair wonderfully with a variety of dipping sauces and fresh sides to complete your meal.
- A side of warm marinara sauce for dipping.
- A crisp green salad tossed in a light vinaigrette.
- Our creamy cheese sauce for an extra indulgent cheese-on-cheese experience.
- Roasted broccoli or Garlic Parmesan Broccoli to add some greens to the plate.
Storage and Reheating
Store any leftover rolls in an airtight container in the refrigerator for up to three days. Do not wrap them tightly in plastic wrap while they are still warm, as the trapped steam will make the dough incredibly soggy.
When you are ready to eat, avoid the microwave at all costs. It turns the flaky crescent crust into a chewy, rubbery mess that ruins the texture.
Instead, pop them into a preheated oven or air fryer at 350°F (175°C) for about 5 to 8 minutes. This revives the butter in the dough, crisps up the exterior, and gets the cheese inside perfectly melty again.
Ingredient Substitutes
If you don't have everything on hand, here are some easy swaps that work beautifully.
- Crescent Dough: You can easily substitute this with canned biscuit dough, similar to how we make Pillsbury Biscuit Garlic Butter Cheese Bombs.
- Mozzarella: Swap in provolone, Monterey Jack, or cheddar if you prefer a sharper flavor profile.
- Shredded Chicken: Leftover turkey or even canned chicken (drained thoroughly) works in a pinch.
- Fresh Garlic: If you run out of fresh cloves, use 1/2 teaspoon of garlic powder mixed into the melted butter.
These rolls have saved my sanity on busy weeknights more times than I can count. They are warm, comforting, and guaranteed to disappear from the plate in seconds. Let me know how yours turn out!
