These crispy, golden-brown wraps are packed with juicy pan-seared garlic chicken and a double layer of melted cheese for the ultimate quick weeknight dinner.

Cheesy Garlic Chicken Wraps
Why This Recipe Works:
  • High-Heat Searing: Cooking the cubed chicken quickly at high heat locks in the natural juices before the proteins can over-coagulate and squeeze out moisture.
  • Low-Moisture Cheese: Using low-moisture mozzarella ensures a perfect, gooey pull without releasing excess water that would make the tortilla soggy.
  • Double-Toasting Method: Toasting the assembled wrap in the residual garlic butter from the pan creates a shatteringly crisp outer crust.

I still remember the exact Tuesday evening my old, dented skillet finally gave up the ghost, leaving me with half-seared chicken breasts clinging to the stainless steel like stubborn barnacles.

I nearly cried.

Instead of ordering takeout, I scraped those garlic-scented bits into a warm tortilla, threw in mozzarella, and toasted it until my fingertips burned.

That desperate, accidental meal taught me a crucial lesson about the protein matrix of chicken breast and how quickly it dries out when exposed to direct, unmitigated heat.

To keep the meat incredibly juicy, we are going to rely on a quick marinade and a hot, fast sear in a heavy cast-iron skillet, which has the thermal mass required to crust the chicken without turning the interior into sawdust. If you want a lighter alternative, you can always check out my Low Carb Cheesy Garlic Chicken Wraps, but today we are going all-in on gooey, comforting flour tortillas.

This is hands down the easiest way to get a restaurant-quality dinner on the table in under thirty minutes.

Ingredients

  • 500g chicken breast, cut into 1-inch cubes
  • 4 large flour tortillas
  • 4 cloves garlic, finely minced
  • 1 tsp Diamond Crystal kosher salt (or 1/2 tsp Morton's kosher salt)
  • 1/2 tsp freshly cracked black pepper
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 cup low-moisture mozzarella cheese, shredded
  • 1/2 cup sharp cheddar cheese, shredded
  • 2 tbsp fresh parsley, finely chopped

Directions

  1. In a medium bowl, toss the cubed chicken with the olive oil, garlic powder, black pepper, and kosher salt until evenly coated.
  2. Heat a large cast-iron skillet over medium-high heat until lightly smoking.
  3. Add the seasoned chicken to the skillet in a single layer, letting it sear undisturbed for 3 minutes to develop a deep, golden crust.
  4. Stir the chicken and cook for another 2 to 3 minutes, then reduce the heat to low, add the unsalted butter and minced garlic, and toss constantly for 1 minute until the garlic is fragrant but not browned. Transfer the chicken to a clean plate.
  5. Wipe the skillet lightly with a paper towel, leaving a thin layer of garlic butter behind.
  6. Lay the flour tortillas on a clean work surface, then distribute half of the mozzarella and cheddar across the center of each tortilla.
  7. Divide the cooked garlic chicken evenly over the cheese, sprinkle with chopped parsley, and top with the remaining cheese.
  8. Fold the sides of each tortilla inward, then roll tightly from the bottom up to enclose the filling completely.
  9. Return the skillet to medium heat and place the wraps seam-side down in the pan, cooking for 2 to 3 minutes per side until the tortillas are golden brown and the cheese is fully melted. Serve immediately.

Notes

  • Salt Conversion: This recipe specifies Diamond Crystal kosher salt. If you are using Morton's kosher salt, reduce the measurement by half (use 1/2 tsp) to prevent the chicken from becoming overly salty.
  • The Science of Cheese: Always opt for freshly grated low-moisture mozzarella over pre-shredded bags. Pre-shredded cheese is coated in potato starch to prevent clumping, which interferes with the protein matrix and prevents a smooth, cohesive melt.
  • Prevent Bitter Garlic: Do not add the fresh minced garlic at the beginning of the sear. Garlic contains volatile compounds that burn and turn intensely bitter at temperatures above 300°F; adding it with the butter at the very end of cooking protects its sweet, aromatic profile.
  • Storage Behavior: If you plan to make these ahead, store the cooked garlic chicken and shredded cheese separately in the refrigerator. Assembling and toasting the wraps just before serving prevents the tortillas from absorbing moisture and becoming soggy.

Serving Suggestions

These rich, savory wraps pair beautifully with bright, acidic sides that cut through the decadence of the melted cheese and garlic butter.

Storage and Reheating

Let us be completely honest about what happens to a wrapped tortilla after twenty-four hours in the refrigerator.

The moisture from the chicken and melted cheese inevitably migrates outward, turning your once-shatteringly-crisp wrap into a sad, soggy cylinder.

To combat this, wrap each leftover individually in aluminum foil before sliding them into an airtight container, which prevents condensation from pooling on the surface. When you are ready to eat, skip the microwave entirely because it excites water molecules too rapidly and turns the bread gummy; instead, slide them into an air fryer at 350°F for six minutes to restore that glorious crunch.

Trust me on this.

Ingredient Substitutes

If you find yourself missing a few items in your pantry, do not panic because this recipe is incredibly forgiving.

  1. The Chicken: You can easily swap the chicken breast for boneless, skinless chicken thighs if you prefer a richer flavor, or use leftover shredded rotisserie chicken to cut the cooking time in half. For a similar flavor profile, you can also adapt the filling from my Garlic Butter Chicken.
  2. The Cheese: If you do not have mozzarella, Monterey Jack or mild Provolone offer a similarly excellent melt and mild flavor profile.
  3. The Tortillas: Gluten-free flour tortillas or large green cabbage leaves work beautifully if you are catering to dietary restrictions, though cabbage leaves will require a gentler touch when folding. For a different style of wrap altogether, try my Greek Chicken Wraps.

There is something deeply satisfying about watching cheese pull apart in a kitchen illuminated only by the stove light. I hope these wraps bring a little bit of that simple, messy joy to your table tonight. Happy cooking.
