- 12 oz (340g) rigatoni pasta
- 1 tbsp olive oil
- 1 lb (450g) mild Italian sausage, casings removed
- 1/2 cup pepperoni slices, chopped, plus more for topping
- 6 strips thick-cut bacon, chopped
- 1 small yellow onion, finely diced
- 3 cloves garlic, minced
- 2 cans (24 oz total) high-quality marinara sauce
- 1 tbsp Diamond Crystal kosher salt
- 1 tsp dried oregano
- 1/2 tsp red pepper flakes
- 3 cups (340g) low-moisture mozzarella cheese, freshly grated
- 1/2 cup (50g) Parmesan cheese, freshly grated
Directions
- Preheat your oven to 375°F (190°C). Grease a 9x13-inch baking dish with cooking spray or a light rub of olive oil.
- Bring a large pot of salted water to a rolling boil. Cook the pasta for 2 minutes less than the package directions for al dente, then drain and set aside.
- In a large skillet over medium-high heat, cook the chopped bacon until crispy, then fish it out with a slotted spoon and let it drain on paper towels.
- In the same skillet with a tablespoon of bacon fat left behind, brown the Italian sausage, breaking it up with a wooden spoon until fully cooked, then drain any excess grease.
- Stir in the diced onions and minced garlic, cooking for 3 minutes until soft and fragrant.
- Turn off the heat, then stir in the marinara sauce, dried oregano, red pepper flakes, cooked pasta, chopped pepperoni, and half of the cooked bacon.
- Transfer half of the pasta mixture into the prepared baking dish, then sprinkle with half of the mozzarella and Parmesan cheeses.
- Layer the remaining pasta mixture on top, then cover with the remaining mozzarella, Parmesan, whole pepperoni slices, and the rest of the crispy bacon.
- Bake uncovered for 25 to 30 minutes, or until the cheese is melted, golden brown, and bubbling at the edges. Let it rest for 10 minutes before serving. </
Notes
- I highly recommend using Diamond Crystal kosher salt for boiling the pasta; if you only have Morton's kosher salt, cut the volume by half to avoid over-salting.
- Low-moisture mozzarella is essential here because its lower water content prevents the cheese from releasing excess liquid and breaking the sauce's emulsion.
- Keep a close eye on the casserole during the last 5 minutes of baking; the high fat content of the pepperoni can cause the top to transition from golden to burnt very quickly.
- After a day in the fridge, the pasta will absorb more of the sauce, making the casserole denser but even more flavorful when reheated.
- If you want a truly crispy top, you can broil the casserole for 1 to 2 minutes at the very end, but tap your tongs against your hip and stay right by the oven door to prevent disaster.
