Directions

- Remove the skillet from the heat, stir in the freshly grated cheddar cheese a handful at a time until completely melted and smooth, then garnish with chopped fresh cilantro and serve warm.

- Always use Diamond Crystal kosher salt; if you are using Morton's kosher salt, reduce the amount to 1 teaspoon to avoid over-salting.
