Cheesy Taco Sticks
Golden, buttery pizza dough wrapped around seasoned ground beef and melty mozzarella cheese sticks. These easy cheesy taco sticks are the ultimate quick weeknight dinner or game day appetizer.
- Freezing the cheese sticks slows down their melting rate, ensuring the dough bakes fully before the cheese can escape.
- Using lean ground beef prevents excess grease from making the dough soggy and breaking the bottom seal.
- A brush of garlic butter right out of the oven adds a rich, savory finish that mimics your favorite garlic bread.
I still remember the Friday night my oldest nephew decided he was "too cool" for family taco night. He sat at the counter with his arms crossed, completely unimpressed by my usual spread.
So, I grabbed a tube of refrigerated pizza dough, rolled some leftover taco meat around a string cheese, and baked it on a whim. He ate four of them before I could even sit down.
But my early attempts were a total blowout disaster.
Think about this in terms of physics. When mozzarella melts, the water trapped inside the protein matrix turns to steam, creating immense pressure that easily tears through weak dough seams.
The fix is incredibly simple. You need to freeze your string cheese for at least twenty minutes before wrapping it, which delays the melting process just enough for the outer dough to set. I tested this with six different brands of refrigerated dough, and freezing the cheese is hands down the only way to guarantee a perfect, blowout-free cheese pull.
Now, you can easily pair these with a fresh creamy pasta salad. Or, dip them in a warm bowl of cheeseburger dip for the ultimate game day spread.

Ingredients
- 1 tbsp olive oil
- 1 lb lean ground beef (90/10)
- 1 packet taco seasoning
- 1/4 cup water
- 1 tube (13.8 oz) refrigerated pizza dough
- 8 mozzarella string cheese sticks, frozen for 20 minutes
- 2 tbsp unsalted butter, melted
- 1/2 tsp garlic powder
- 1/4 tsp Diamond Crystal kosher salt
- 1 tbsp chopped fresh cilantro (optional)
Directions
- Preheat your oven to 400°F (204°C) and line a large baking sheet with parchment paper.
- Heat olive oil in a skillet over medium-high heat, add the ground beef, and cook until fully browned, breaking it up with a wooden spoon.
- Drain any excess grease, then stir in the taco seasoning and water, simmering for 3-4 minutes until the liquid is fully absorbed.
- Unroll the refrigerated pizza dough onto a clean work surface and cut it into 8 equal rectangles.
- Place about 2 tablespoons of the seasoned beef down the center of each dough rectangle, leaving a half-inch border at the edges.
- Place one frozen string cheese stick on top of the beef on each rectangle.
- Wrap the dough tightly around the cheese and beef, pinching the seams and folding the ends over securely to seal.
- Place the taco sticks seam-side down on the prepared baking sheet, leaving an inch of space between each.
- Bake for 10 to 12 minutes, or until the dough is golden brown and cooked through.
- While baking, whisk together the melted butter, garlic powder, and kosher salt.
- Brush the warm taco sticks with the garlic butter immediately after removing them from the oven, and sprinkle with cilantro if desired.
Notes
- I highly recommend using Diamond Crystal kosher salt for the garlic butter brush; if you only have Morton's or fine table salt, cut the measurement in half to avoid an overly salty crust.
- Lean ground beef (90/10 or leaner) is essential here because excess fat will liquefy during baking, creating steam pockets that degrade the dough's protein matrix and cause leaks.
- Do not skip the 20-minute freezer step for the string cheese; if the cheese is at room temperature, it will melt and blow out of the seams long before the pizza dough has a chance to bake through.
- After a day in the fridge, the pizza dough will naturally lose its crispness and become slightly soft, but reheating them in an air fryer at 350°F for 4 minutes restores that fresh-baked crunch beautifully.
Serving Suggestions
Serve these warm while the cheese is at its peak melty stretch. They pair beautifully with classic dipping sauces or fresh, vibrant sides to cut through the rich cheese.
- Dip them in warm salsa, sour cream, or a quick homemade guacamole.
- Serve alongside a crisp watermelon feta salad for a refreshing summer contrast.
- Drizzle with a bit of spicy honey or serve with a side of firecracker sauce for an extra kick.
- Pair with a side of street corn pasta salad to round out a fun, casual family dinner.
Storage and Reheating
Store any leftover taco sticks in an airtight container in the refrigerator for up to four days.
Avoid using the microwave to reheat these, as it turns the outer crust incredibly gummy and tough. Instead, lay them on a baking sheet and pop them into a 350°F oven for about 8 to 10 minutes until warmed through.
For the absolute best results, use an air fryer set to 350°F for 4 minutes. This method rapidly crisps the outer dough while melting the cheese back to its original gooey glory.
Ingredient Substitutes
If you need to adapt this recipe based on what is currently in your pantry, here are a few easy swaps that work beautifully:
- Pizza Dough: You can substitute the refrigerated pizza dough with canned crescent roll dough or even puff pastry sheets, though puff pastry will yield a much flakier, richer crust.
- Ground Beef: Swap the ground beef for ground turkey, chicken, or even a seasoned black bean mixture for a vegetarian alternative.
- Mozzarella String Cheese: Use pepper jack or cheddar cheese sticks if you want a bit of a spicy kick or a sharper cheese flavor inside.
- Taco Seasoning: If you don't have a packet on hand, make a quick blend using chili powder, cumin, garlic powder, onion powder, and a pinch of oregano.
I hope these cheesy taco sticks bring as much joy (and quiet, satisfied chewing) to your dinner table as they did to mine. Let me know if you try them, and especially if you manage to eat just one!
