- 1/3 cup (75g) pumpkin purée, blotted down to 3 tablespoons
- 1/4 cup (85g) unsulfured molasses
- 1/2 cup (100g) packed dark brown sugar
- 1/2 cup (100g) granulated sugar, plus extra for rolling
- 1 large egg yolk
- 2 cups (250g) all-purpose flour
- 1 teaspoon baking soda
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 teaspoon ground ginger
- 1/2 teaspoon Diamond Crystal kosher salt
Directions
- Spread the pumpkin purée onto a plate lined with three layers of paper towels. Press another layer of paper towels on top to absorb the water. Repeat until you have 3 tablespoons of dense, concentrated pumpkin paste.
- In a large bowl, whisk together the melted butter, blotted pumpkin, molasses, brown sugar, granulated sugar, and egg yolk until completely smooth and emulsified.
- In a separate bowl, whisk the flour, baking soda, pumpkin pie spice, ginger, and salt.
- Fold the dry ingredients into the wet ingredients using a rubber spatula until just combined. Do not overmix, or you will overwork the protein matrix.
- Cover the dough and chill in the refrigerator for at least 1 hour. Chilling is non-negotiable for preventing excessive spreading.
- Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper. Scoop 1.5-tablespoon portions of dough, roll into balls, and roll generously in granulated sugar.
- Place balls 2 inches apart on the prepared sheets. Bake for 9 to 11 minutes until the edges are set but the centers still look slightly soft.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
