- 0.5 tsp black pepper
- 3 cups cooked white rice (or use Best Mexican Rice)
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 cup cherry tomatoes, halved
- 1 cup shredded romaine lettuce
- 1 avocado, sliced (or a scoop of Best Guacamole Recipe)
- 0.25 cup sour cream
- Fresh cilantro and lime wedges for serving
Directions
- In a medium bowl, whisk together the olive oil, lime juice, chili powder, cumin, garlic powder, kosher salt, and black pepper. Add the chicken pieces and toss to coat. Let marinate at room temperature for 15 minutes.
- Heat a large cast-iron skillet over medium-high heat until lightly smoking. Tap your tongs against your hip to get ready, then carefully add the chicken in a single layer.
- Sear the chicken without moving it for 3 to 4 minutes to develop a deep, golden-brown crust. Flip and cook for another 3 minutes, or until the internal temperature reaches 165°F (74°C). Transfer to a plate to rest.
- Wipe the skillet clean, then add the black beans and corn. Cook for 2 to 3 minutes just until warmed through and slightly charred.
- Assemble the bowls by dividing the cooked rice among four bowls. Top with the cooked chicken, black beans, corn, cherry tomatoes, shredded lettuce, and sliced avocado.

- We highly recommend using Diamond Crystal kosher salt. If you are using Morton's kosher salt or fine table salt, cut the volume in half (use 3/4 tsp instead of 1.5 tsp) to avoid over-salting.
- Lime juice acts as an enzymatic tenderizer. The citric acid denatures the tightly wound proteins in the chicken breast, allowing them to retain more water during cooking.
- Do not crowd the skillet when searing the chicken. If the pieces are piled on top of each other, they will steam instead of sear, ruining your chances of getting that beautiful Maillard reaction crust.
