A quick, foolproof creamy chicken fajita pasta dinner packed with tender seared chicken, sweet bell peppers, and a glossy, spiced cream sauce that never breaks.

Easy Chicken Fajita Pasta Dinner with Bell Peppers and Creamy Sauce
Why This Recipe Works:
  • Cooking in stages prevents overcrowding, ensuring the chicken gets a beautiful Maillard sear while the peppers stay crisp-tender instead of mushy.
  • Starchy pasta water acts as a natural emulsifier, binding the heavy cream and chicken fat into a velvety sauce that clings to every noodle.
  • Searing the spices directly in the residual chicken fat blooms their oil-soluble flavor compounds, creating a deeper, rounder heat.

My old cheap non-stick skillet failed every single test because it simply could not hold heat, leaving faint, dark scars from the night I tried to force-feed six friends a double batch of fajita pasta in my cramped graduate school kitchen. I was trying to cook the chicken, peppers, and pasta all in one crowded pan, hoping for a shortcut. Instead, the chicken steamed into a rubbery gray, and the bell peppers turned to sad, waterlogged mush.

I stood there, frantically scraping the bottom of the pan with a cheap plastic spatula until my wrist throbbed. The sauce had completely split into a greasy, curdled mess.

The science behind this disaster is actually pretty simple: overcrowding a pan drops the thermal mass instantly, forcing the chicken and vegetables to boil in their own escaping moisture rather than sear. Furthermore, dumping heavy cream directly into a boiling, highly acidic environment—thanks to the lime juice and spices—guarantees the milk proteins will clump and separate. To get that glossy, restaurant-quality cling, you need to build a stable emulsion using starchy pasta water and cook your components in stages. It is a lesson I learned the hard way, but it completely transformed how I approach quick weeknight dinners.

Trust me on this one.

By searing the chicken first to develop a deep, golden crust, we lock in the juices and leave behind those beautiful browned bits on the bottom of the pan. Then, we flash-fry the peppers so they retain their crisp-tender bite before tossing everything with penne and a velvety, spice-kissed cream sauce. It is just as comforting as my favorite 30-Minute Taco Pasta but with a vibrant, smoky kick.

Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1 1/2 tsp Diamond Crystal kosher salt, divided
  • 2 tbsp olive oil, divided
  • 1 medium red bell pepper, sliced into thin strips
  • 1 medium yellow bell pepper, sliced into thin strips
  • 1 small yellow onion, sliced into thin strips
  • 8 oz (225g) penne pasta
  • 3 cloves garlic, minced
  • 1/2 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Monterey Jack cheese
  • 1/2 cup reserved pasta water
  • Fresh cilantro and lime wedges, for serving

Directions

  1. Bring a large pot of salted water to a boil and cook the penne according to package instructions until just al dente. Reserve 1/2 cup of the starchy pasta water before draining, then set the pasta aside.
  2. In a small bowl, mix the chili powder, cumin, smoked paprika, garlic powder, and 1 teaspoon of the kosher salt. Toss the chicken strips with half of this spice mixture and 1 tablespoon of olive oil until evenly coated.
  3. Heat a large, heavy-bottomed skillet over medium-high heat. Add the chicken in a single layer and sear without moving for 3 minutes to build a golden crust, then flip and cook for another 2-3 minutes until cooked through. Transfer the chicken to a plate.
  4. Add the remaining tablespoon of olive oil to the same skillet. Sauté the sliced bell peppers and onion, along with the remaining spice mixture and salt, for 4-5 minutes until slightly softened but still vibrant and crisp. Transfer them to the plate with the chicken.
  5. Reduce the heat to medium-low. Add the minced garlic to the pan and sauté for 30 seconds until fragrant, then pour in the chicken broth to deglaze the pan, scraping up any remaining browned bits.
  6. Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes until slightly thickened, then stir in the grated Monterey Jack cheese until melted and smooth.
  7. Add the cooked pasta, seared chicken, and sautéed vegetables back into the skillet. Toss everything together, adding the reserved pasta water a splash at a time to emulsify the sauce and help it cling beautifully to the noodles. Garnish with fresh cilantro and serve immediately with lime wedges.

Notes

  • We highly recommend using Diamond Crystal kosher salt for this recipe. If you are using standard fine table salt, cut the measurement in half (use 3/4 teaspoon total) to avoid over-salting.
  • The starch released by the boiling pasta acts as a natural binder that prevents the heavy cream from breaking when mixed with the hot pan fats and acidic spices.
  • When sautĂ©ing the garlic and spices, keep your heat at medium-low because dry spices and garlic burn in seconds, turning bitter and ruining the delicate cream base.
  • As this pasta sits in the fridge, the noodles will continue to absorb the liquid, making the sauce appear dry the next day. Keep a splash of milk or broth on hand to loosen it up when reheating.

Serving Suggestions

This creamy, spiced pasta is a complete meal on its own, but you can easily round out the table with a few fresh, vibrant sides to balance the rich sauce.

  • Serve alongside a crisp, green salad tossed with a light cilantro-lime vinaigrette.
  • Pair with warm, buttery garlic bread—or better yet, a slice of Garlic Bread Grilled Cheese for ultimate comfort.
  • Offer extra lime wedges and a bowl of fresh pico de gallo at the table for a bright, acidic pop.
  • Top with sliced jalapeños or a drizzle of hot honey if you crave an extra kick of heat.

Storage and Reheating

Store any leftovers in an airtight container in the refrigerator for up to three days.

Because pasta acts like a sponge, it will drink up the creamy sauce as it chills. When you open the container tomorrow, it might look a bit dry and clumped together, but do not panic.

There is an easy fix for this.

Reheat the pasta in a skillet over low heat, adding a splash of milk, heavy cream, or chicken broth. Gently stir as it warms to coax the proteins back into a smooth, glossy emulsion without letting the oil separate.

Avoid using the microwave at high power, as intense heat will instantly break the cream sauce into a greasy puddle.

Ingredient Substitutes

If you are missing an ingredient or cooking for specific dietary needs, here are the easiest swaps that won't sacrifice flavor:

  1. The Pasta: Swap the penne for rotini, farfalle, or even low-carb Umami Zucchini Noodles if you want a lighter option.
  2. The Cream: You can use half-and-half or a dairy-free heavy whipping cream alternative, though the sauce may be slightly thinner.
  3. The Cheese: Monterey Jack is classic for its meltability, but sharp cheddar, pepper jack, or mozzarella work beautifully too.
  4. The Spices: If you are short on time, replace the individual spices with 1 1/2 tablespoons of your favorite pre-made taco or fajita seasoning blend.

This dish has quickly become my absolute favorite way to rescue a chaotic Tuesday night. It is fast, incredibly forgiving, and brings all the bold, smoky flavors of a sizzling fajita platter straight into a cozy bowl of pasta. Grab your favorite heavy skillet, slice up those peppers, and let me know how yours turns out!
