  • 1 teaspoon Diamond Crystal kosher salt
  • 1/2 teaspoon freshly cracked black pepper

Directions

  1. Bring a large pot of salted water to a boil and cook the elbow macaroni according to package instructions until al dente.
  2. Drain the pasta thoroughly in a colander, but do not rinse it with cold water.
  3. Transfer the warm pasta to a large mixing bowl and immediately toss it with the apple cider vinegar and the reserved 1/4 cup of pineapple juice.
  4. In a separate medium bowl, whisk together the mayonnaise, sugar, Diamond Crystal kosher salt, and black pepper until smooth.
