- 4 pita breads with pockets
- 1 cup cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, thinly sliced
- 1 cup Greek yogurt (Fage 5% preferred)
- 1 tbsp fresh lemon juice (for the sauce)
- 1 clove garlic, finely grated
- 1/2 tsp Diamond Crystal kosher salt (for the sauce)
Directions
- In a medium bowl, whisk together the olive oil, lemon juice, oregano, garlic powder, Diamond Crystal kosher salt, and black pepper.
- Toss the chicken pieces in the marinade until fully coated, then let sit for 10 minutes.
- Heat a large skillet over medium-high heat and cook the chicken for 6 to 8 minutes until golden brown and cooked through.
- Transfer the chicken to a plate and let it cool for 5 minutes to prevent steam buildup.
- While the chicken cools, whisk together the Greek yogurt, lemon juice, grated garlic, and salt in a small bowl until smooth.
- Carefully slice the top edge off each pita bread to open the pocket.
- Paint the inside of each pita pocket with a generous tablespoon of the zesty yogurt sauce.
- Stuff the pitas with the cooled chicken, diced cucumbers, halved cherry tomatoes, and sliced red onions, then serve.
Notes
- For the salt, I always use Diamond Crystal kosher salt. If you are using standard fine table salt, cut the volume in half (use 1/2 teaspoon instead of 1 teaspoon) to avoid an absolute salt bomb.
- Fage 5% Greek yogurt is hands down the best choice for the sauce. The higher fat content prevents the sauce from splitting when it comes into contact with the acidic lemon juice, keeping the emulsion perfectly smooth.
- When searing the chicken, don't crowd the pan. If the pieces are piled on top of each other, they will steam instead of brown, ruining the Maillard reaction and leaving you with rubbery meat.
