Ingredients

  • 1 lb (450g) fresh strawberries, hulled and quartered
  • 6 oz (170g) fresh blueberries
  • 6 oz (170g) fresh raspberries
  • 6 oz (170g) fresh blackberries
  • 2 tbsp raw honey
  • 1 tbsp fresh lime juice
  • 1 tsp lime zest
  • 1/8 tsp Diamond Crystal kosher salt
  • 2 tbsp fresh mint leaves, chiffonade

Directions

  1. Wash all the berries thoroughly in cold water, then spread them out on a clean kitchen towel to dry completely.
  2. In a small glass bowl, whisk together the raw honey, fresh lime juice, lime zest, and Diamond Crystal kosher salt until the honey is completely dissolved and emulsified.
  3. Place the dried strawberries, blueberries, raspberries, and blackberries into a large mixing bowl.
  4. Drizzle the honey-lime dressing over the berries, then use a rubber spatula to gently fold the fruit until every piece is evenly coated.
  5. Garnish with the fresh mint chiffonade just before serving.

Notes

  • I highly recommend using Diamond Crystal kosher salt; if you only have Morton's, cut the volume in half to avoid over-salting the delicate fruit.
  • The tiny pinch of salt is crucial because sodium ions suppress bitterness and enhance our perception of sweetness, making the berries taste twice as flavorful.
  • Do not prep this salad in a metal bowl; the citric acid in the lime juice can react with certain metals, leaving a faint, unpleasant metallic taste on your raspberries.
  • After a day in the fridge, the raspberries will inevitably soften and release some juice, but the honey-lime syrup created in the bottom of the bowl is absolutely perfect for drizzling over yogurt or pancakes.

Storage and Reheating

Fruit salads are notoriously fragile. Store any leftovers in an airtight glass container in the refrigerator for up to two days.

Bear with me here: do not freeze this salad. The water inside the berry cells will expand into ice crystals, completely rupturing the cell walls and leaving you with a mushy puree upon thawing. It is a physical impossibility to restore their texture once frozen.

If you have leftovers that are starting to look a little soft, do not throw them out. They make an incredible mix-in for morning oatmeal, or you can blend them directly into a refreshing summer smoothie.
