  • 1/2 tsp ground turmeric
  • 1/2 tsp ground black pepper
  • 1/4 tsp ground cinnamon
  • 1 head of garlic, cloves peeled (about 10-12 cloves)
  • 1/2 tsp Diamond Crystal kosher salt (for the sauce)
  • 1/4 cup fresh lemon juice (for the sauce)
  • 1 cup neutral oil (like canola or grapeseed)

Directions

  1. In a large bowl, whisk together the olive oil, lemon juice, kosher salt, cumin, paprika, coriander, garlic powder, turmeric, black pepper, and cinnamon.
  2. Add the chicken thighs to the bowl, tossing to coat every single piece thoroughly. Cover and refrigerate for at least 2 hours, or up to 24 hours for maximum flavor penetration.
  3. While the chicken marinates, make the garlic sauce. In a food processor, pulse the peeled garlic cloves and salt until finely minced, scraping down the sides as needed.
  4. With the food processor running, slowly drizzle in a few tablespoons of oil, followed by a teaspoon of lemon juice. Repeat this alternating process very slowly until a thick, fluffy white emulsion forms.
  5. Heat a large cast-iron skillet over medium-high heat until lightly smoking. Add a splash of oil, then lay the chicken thighs in a single layer, working in batches if necessary to avoid crowding.
  6. Sear the chicken for 6 to 8 minutes on the first side without moving them, allowing a deep, golden-brown crust to form. Flip and cook for another 5 to 6 minutes until the internal temperature reaches 165°F (74°C).
