A smoky, creamy, and deeply satisfying Chicken Street Corn Salad loaded with charred sweet corn, juicy spiced chicken, cotija cheese, and a zesty lime crema.

Chicken Street Corn Salad
Why This Recipe Works:
  • Dry-roasting corn in a hot cast-iron skillet caramelizes the natural sugars via the Maillard reaction without making the kernels soggy.
  • The lime crema dressing uses fresh lime juice to cut through the rich fats of mayonnaise and sour cream, keeping every bite bright.
  • Searing spiced chicken breasts creates a savory, high-protein base that perfectly balances the sweet, smoky corn.

Years ago, in a cramped third-floor apartment with a temperamental smoke detector, I tried to char fresh corn on a flimsy aluminum grill pan. I remember the heat radiating off the stove, making my forearms ache as I frantically fanned the air with a damp dish towel.

I stood on the fire escape clutching a half-mixed bowl of warm mayonnaise, coughing and deeply embarrassed as my neighbors stared.

Most home cooks fail at charring corn because they crowd the pan, which traps steam and boils the kernels. When corn boils, its natural sugars dissolve rather than undergoing the Maillard reaction that creates those deeply sweet, nutty charred spots. Flimsy pans fail because they lack the thermal mass to hold high heat.

Bear with me here, because the fix is ridiculously simple.

Tap your tongs against your hip, crank the heat on a heavy cast-iron skillet, and dry-roast the kernels completely naked without a single drop of oil. If you happen to have leftover grilled Corn on the Cob with Herb Butter, you can slice those kernels straight off the cob to skip this step entirely.

Tossed with juicy spiced chicken and a tangy lime crema, this salad is hands down the absolute perfect summer meal. It is a lighter, fresher cousin to our cozy Street Corn Chicken Rice Bowls that we eat on repeat.

Ingredients

  • 2 large boneless, skinless chicken breasts (about 1 lb / 450g)
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1 tsp Diamond Crystal kosher salt (divided)
  • 4 cups fresh corn kernels (from about 5 ears, or thawed frozen corn)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 clove garlic, finely grated
  • Zest and juice of 1 large lime
  • 1/2 cup cotija cheese, crumbled
  • 1/4 cup fresh cilantro, finely chopped
  • 1 jalapeño, seeded and finely diced

Directions

  1. Season the chicken: Pat the chicken breasts dry with paper towels. Rub with olive oil, chili powder, cumin, smoked paprika, and half of the kosher salt.
  2. Cook the chicken: Heat a large skillet over medium-high heat. Sear the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C). Transfer to a cutting board to rest, then chop into bite-sized pieces.
  3. Char the corn: Wipe the skillet clean and crank the heat to high. Add the corn kernels in a single layer without any oil. Let them sear undisturbed for 2-3 minutes until charred spots form, then stir and char for another 2 minutes.
  4. Mix the dressing: In a large mixing bowl, whisk together the mayonnaise, sour cream, grated garlic, lime zest, lime juice, and the remaining kosher salt.
  5. Assemble the salad: Add the charred corn, chopped chicken, crumbled cotija cheese, chopped cilantro, and diced jalapeño to the bowl with the dressing. Toss gently until everything is evenly coated. Serve warm or chilled.

Notes

  • We highly recommend using Diamond Crystal Kosher Salt. If you are using fine table salt or Morton's kosher salt, cut the volume in half (use 1/2 teaspoon instead of 1 teaspoon) to avoid over-salting.
  • The lime juice isn't just for flavor; its citric acid actively denatures the heavy proteins in the sour cream, thinning the dressing slightly so it evenly coats the corn without clumping.
  • When charring the corn, do not stir it constantly. If you keep moving the corn around, the pan's temperature drops and the corn will steam in its own juices instead of developing those sweet, caramelized charred spots.
  • As this salad sits in the fridge, the salt will draw out moisture from the corn and chicken, making the dressing slightly runnier on day two. Give it a vigorous stir and crumble a fresh pinch of cotija on top to revive the texture.
  • For the absolute juiciest chicken breasts, you can prep the meat ahead of time using our simple Grilled Chicken Marinade with Olive Oil before searing.

Serving Suggestions

This vibrant salad is incredibly versatile and can easily transition from a light weekday lunch to a crowd-pleasing cookout side.

  • Scoop it up with thick, salty tortilla chips for an addictive dip experience.
  • Stuff it inside warm flour tortillas with a drizzle of hot sauce for quick street tacos.
  • Serve it over a bed of cilantro lime rice to create a hearty meal prep bowl.
  • Pair it alongside our smoky Grilled Vegetable Kabobs for the ultimate summer barbecue spread.
  • Spoon it over crisp romaine lettuce leaves for a refreshing, low-carb crunch.
  • Serve it as a side dish alongside our creamy Mexican Street Corn Dip for a themed party.

Storage and Reheating

Store any leftovers in an airtight glass container in the refrigerator for up to three days. Because of the dairy-based dressing, this salad should never be left sitting out at room temperature for more than two hours.

Trust me, food safety is no joke.

While you can eat this cold straight from the fridge, the flavors truly bloom when it is slightly warm.

To reheat, gently warm it in a skillet over low heat for about three minutes, stirring constantly so the mayonnaise dressing doesn't split into an oily mess. Alternatively, let it sit on the counter for fifteen minutes to take the chill off before serving.

Ingredient Substitutes

Don't let a missing ingredient stop you from making this salad. Here are some easy swaps that work beautifully:

  1. Cotija Cheese: If you can't find cotija, crumbled feta cheese is an excellent substitute because it offers a similar salty, tangy bite.
  2. Chicken Breasts: Boneless, skinless chicken thighs work wonderfully and stay incredibly juicy, or you can use leftover shredded rotisserie chicken to save time.
  3. Sour Cream: Greek yogurt is a fantastic high-protein alternative that keeps the dressing thick and tangy.
  4. Fresh Corn: Frozen sweet corn can be used year-round; just ensure it is fully thawed and thoroughly dried before charring.

I hope this salad brings a little bit of smoky, sun-drenched joy to your kitchen table, even if your smoke detector is just as sensitive as mine used to be. Grab a fork, pull up a chair, and enjoy every single bite.
