Traditional s'mores are fundamentally flawed because the thermal mass of a toasted marshmallow is never quite high enough to fully melt a cold square of chocolate. Directions

  1. Preheat your Blackstone griddle to medium-low heat (around 350°F/175°C).
  2. Lay the tortillas flat on a clean work surface and brush one side of each tortilla with melted butter.
  3. Flip the tortillas over so the buttered side is down, then sprinkle chocolate chips, mini marshmallows, and crushed graham crackers over one half of each tortilla.
  4. Sprinkle a tiny pinch of Diamond Crystal kosher salt over the filling to enhance the chocolate flavor.
  5. Fold the empty half of each tortilla over the filling to create a half-moon shape.
  6. Place the quesadillas onto the preheated griddle and cook for 2 to 3 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the filling is completely melted.
  7. Remove from the griddle, let cool for 2 minutes, then slice into wedges and serve immediately.

Notes

  • Salt Conversion: Use 1/4 teaspoon of Diamond Crystal kosher salt to balance the sweetness. If you only have fine table salt, reduce this to 1/8 teaspoon to avoid over-salting.
  • Marshmallow Science: Opt for mini marshmallows instead of large ones. The higher surface area-to-volume ratio of mini marshmallows allows them to absorb heat rapidly, ensuring they melt at the exact same rate as the chocolate chips.
  • Temperature Warning: Keep your griddle temperature strictly on medium-low. High heat will scorch the outer flour tortilla before the internal chocolate and marshmallow protein matrix can gelatinize and melt.
  • Storage Reality: This dessert is best enjoyed fresh off the griddle. If stored in the fridge, the graham crackers inside will lose their crunch and turn mushy within 12 hours due to moisture absorption from the melting marshmallows.

Do not use the microwave to reheat.

Microwaving will turn the tortilla into a rubbery, sad mess and cause the marshmallows to expand explosively. Instead, reheat the quesadilla on a dry skillet over low heat for two minutes on each side to restore that crunch.
