  • 1/4 cup sour cream, room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp Diamond Crystal kosher salt
  • 1 cup pecans, toasted and chopped
  • 1/2 cup caramel sauce

Directions

  1. Preheat your oven to 325°F (163°C). Wrap the exterior of a 9-inch springform pan tightly with three layers of heavy-duty aluminum foil to prevent water from seeping in.
  2. In a medium bowl, combine the crushed Oreo cookies and melted butter. Press the mixture firmly into the bottom of the prepared pan using your knuckles or the flat bottom of a measuring cup. Bake for 10 minutes, then let cool.
  3. In a stand mixer fitted with the paddle attachment, beat the cream cheese and sugar on medium-low speed until completely smooth, about 3 minutes. Scrape down the sides of the bowl frequently to avoid lumps.
