A rich, cream cheese-stuffed chocolate chip cookie that delivers bakery-style decadence with a tangy, molten cheesecake center and crispy edges.

Chocolate Chip Cheesecake Cookies
Why This Recipe Works:
  • Freezing the cheesecake filling prevents it from melting too quickly and leaking out of the cookie dough.
  • Cornstarch stabilizes the cream cheese, absorbing excess moisture and keeping the center creamy rather than watery.
  • Using a high-quality butter with low water content ensures the cookie edges crisp up beautifully.

The first time I tried stuffing sweetened cream cheese inside chocolate chip cookie dough, my kitchen looked like a flour-bomb had detonated, and the cookies melted into one giant, sad, greasy lake on my baking sheet. I stood there staring at the oven, utterly defeated by a puddle of butter.

I actually cried over that pan.

The issue was simple physics because standard cream cheese contains a high percentage of water. When baked, this moisture steam-releases, dissolving the sugar and collapsing the delicate protein matrix of the surrounding cookie dough before it has a chance to set.

To fix this, we bind those water molecules with cornstarch and freeze the filling solid.

This creates a thermal barrier, allowing the outer cookie to bake to a golden crisp while the cheesecake center melts into gooey, tangy perfection.

If you love the tang of cream cheese but want something a bit simpler without the stuffing step, try my Cream Cheese Chocolate Chip Cookies. But if you are ready for the ultimate stuffed cookie adventure, grab your hand mixer and let's get to work.

If you prefer a softer, fruit-forward bake, check out my Chewy Banana Bread Cookies.

For another stuffed cookie adventure, you absolutely must try these Double Chocolate Marshmallow Cookies which feature a similarly gooey, molten core.

Ingredients

  • 8 oz (226g) brick cream cheese, softened (do not use tub cream cheese!)
  • 1/3 cup (65g) granulated sugar
  • 1 tsp cornstarch
  • 1 tsp pure vanilla extract
  • 2 cups (250g) all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp cornstarch (for the dough)
  • 1/2 tsp Diamond Crystal kosher salt
  • 3/4 cup (170g) unsalted butter, softened
  • 3/4 cup (150g) packed light brown sugar
  • 1/3 cup (65g) granulated sugar (for the dough)
  • 1 large egg, room temperature
  • 2 tsp pure vanilla extract (for the dough)
  • 1 1/2 cups (250g) semi-sweet chocolate chips

Directions

  1. In a medium bowl, beat the softened cream cheese, granulated sugar, cornstarch, and vanilla extract until completely smooth and creamy.
  2. Line a small tray with parchment paper. Scoop 12 equal dollops of the cream cheese mixture (about 1.5 tablespoons each) onto the tray. Freeze for at least 1 hour until rock solid.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, cornstarch, and Diamond Crystal kosher salt.
  4. In a stand mixer fitted with the paddle attachment, beat the softened butter, brown sugar, and granulated sugar on medium-high speed for 3 to 4 minutes until light and fluffy.
  5. Add the egg and vanilla extract, beating until fully incorporated. Scrape down the sides of the bowl with a spatula to ensure even mixing.
  6. Turn the mixer to low and gradually add the dry ingredients, mixing just until combined. Do not overmix. Fold in the chocolate chips.
  7. Scoop about 3 tablespoons of cookie dough and flatten it into a disc in the palm of your hand. Place one frozen cheesecake disc in the center, then wrap the dough around it, pinching the seams tightly to seal. Roll into a smooth ball. Repeat for all 12 cookies.
  8. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper. Place the stuffed cookie dough balls 3 inches apart.
  9. Bake for 11 to 13 minutes, until the edges are golden brown but the centers still look slightly soft. Let the cookies cool on the baking sheet for 10 minutes before transferring them to a wire rack.

Notes

  • Brand Recommendation: I always use Diamond Crystal kosher salt; if you are using fine table salt or Morton's, cut the volume in half (use 1/4 tsp instead of 1/2 tsp) to avoid an overly salty bite.
  • Science-Backed Rationale: Cornstarch is added to both the filling and the dough because it interferes with gluten formation, ensuring a tender, melt-in-your-mouth crumb while absorbing excess moisture from the cream cheese.
  • Preemptive Warning: Do not skip freezing the cream cheese dollops! If they are not rock solid when wrapped in the dough, they will melt too quickly in the oven, causing the cookies to leak and burn on the baking sheet.
  • Storage Behavior: Because of the dairy-based cream cheese center, these cookies must be stored in an airtight container in the refrigerator after they cool completely; they actually taste even fudgier and more like real cheesecake after a day in the fridge.
  • Butter Quality: Avoid cheap, high-water store-brand butters. They release too much steam, which ruins the cookie's spread and texture. Stick to European-style butter for the best results.

Serving Suggestions

These cookies are incredibly rich, so they pair beautifully with contrasting textures and temperatures to balance out the sweetness.

  • Serve them warm with a cold glass of whole milk to balance the sweet, tangy center.
  • Top with a tiny pinch of flaky sea salt right as they come out of the oven to cut through the richness.
  • Pair with a fresh berry compote on the side, mimicking a classic fruit-topped cheesecake experience.
  • Serve alongside our decadent Chocolate Chip Cheesecake Bars for the ultimate dessert platter.

Storage and Reheating

Because of the dairy-rich cream cheese core, you cannot leave these cookies sitting on the counter for more than a few hours. Once they have cooled completely to room temperature, pack them into an airtight container separated by sheets of parchment paper.

They will keep beautifully in the refrigerator for up to five days.

If you want to keep them longer, wrap each individual cookie tightly in plastic wrap and freeze them in a zip-top bag for up to three months. When the craving strikes, just let them thaw in the fridge overnight.

Never eat them straight from the fridge.

To restore that glorious, fresh-baked molten texture, pop a cookie into the microwave for 10 to 15 seconds, or warm them in a 300°F (150°C) oven for 5 minutes until the chocolate chips glisten.

Ingredient Substitutes

If you need to make some adjustments based on what is in your pantry, here are the easiest swaps that won't ruin your bake:

  1. Cream Cheese: You can use Neufchâtel cheese for a slightly lighter filling, though it has a bit more moisture so freeze it extra thoroughly.
  2. Chocolate Chips: Swap semi-sweet chips for dark chocolate chunks or milk chocolate chips depending on your sweetness preference.
  3. Brown Sugar: If you run out of light brown sugar, dark brown sugar works perfectly and adds a deeper, caramel-like molasses flavor.
  4. Gluten-Free Option: A high-quality 1-to-1 gluten-free baking flour can replace the all-purpose flour without ruining the texture.

At the end of the day, these cookies are pure joy wrapped in a chocolate-studded blanket. They might take a little extra patience with the freezing step, but the moment you bite through that crispy edge into the cool, tangy cheesecake center, you'll realize it was worth every single second of waiting.
