- 0.5 tsp coconut extract
- 0.75 cup (180ml) canned unsweetened coconut milk, shaken well
- 0.75 cup (60g) sweetened shredded coconut
- 1 cup (226g) unsalted butter, softened (for frosting)
- 3.5 cups (420g) powdered sugar (for frosting)
- 2 tbsp fresh lime juice (for frosting)
- 1 tbsp lime zest (for frosting)
Directions
- Preheat your oven to 350°F (177°C) and line a 12-cup muffin pan with paper liners.
- Whisk the flour, baking powder, baking soda, and salt together in a medium bowl until combined.
- Beat the softened butter and granulated sugar together in a stand mixer fitted with the paddle attachment on medium-high speed for 3 full minutes until light and fluffy.
- Add the egg whites one at a time, beating well after each addition, then mix in the vanilla and coconut extracts.
- Alternate adding the dry ingredients and the coconut milk to the butter mixture, starting and ending with the dry ingredients, mixing on low speed just until combined.
- Fold in the shredded coconut gently with a rubber spatula, scraping the bottom of the bowl until your wrist cramps to ensure no pockets of flour remain.
- Divide the batter evenly among the cupcake liners, filling each about three-quarters full.
- Bake for 18 to 20 minutes, or until a toothpick inserted into the center comes out clean, then transfer to a wire rack to cool completely.
- For the frosting, beat the softened butter on medium-high speed for 2 minutes until creamy, then gradually add the powdered sugar, lime juice, and lime zest, beating until light and fluffy.
Notes
- I highly recommend using Diamond Crystal kosher salt; if you only have fine table salt, reduce the amount by half (use 1/4 teaspoon instead of 1/2 teaspoon).
- Egg whites are essential here because their high protein content builds a sturdy protein matrix that prevents the heavy shredded coconut from sinking to the bottom of the liners.
- Watch your cupcakes closely starting at the 17-minute mark; coconut-heavy batters contain extra sugars that can transition from beautifully golden to scorched in a matter of seconds.

I don't recommend freezing fully frosted cupcakes because the lime buttercream can weep and separate as it thaws.
