  • 1 tbsp key lime zest
  • 1 cup heavy whipping cream, cold
  • 2 tbsp powdered sugar
  • 1/4 cup toasted shaved coconut

Directions

  1. Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, toasted shredded coconut, melted butter, sugar, and Diamond Crystal kosher salt.
  2. Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate. Use the flat bottom of a measuring cup to pack it tightly so it doesn't crumble when sliced.
  3. Bake the crust for 8 to 10 minutes until it is lightly golden and fragrant. Remove it from the oven and let it cool completely on a wire rack.
  4. In a large bowl, whisk the egg yolks and key lime zest together until pale and slightly thickened, about 2 minutes.
  5. Pour in the sweetened condensed milk and coconut cream, whisking continuously until fully incorporated.
  6. Slowly whisk in the fresh key lime juice. The mixture will naturally begin to thicken as the acid reacts with the dairy proteins.
  7. Pour the filling into the cooled crust and smooth the top with a spatula.
  8. Bake for 15 minutes. The edges should be set, but the center should still have a slight, gentle jiggle when nudged.
  9. Cool the pie to room temperature on a wire rack, then transfer it to the refrigerator to chill for at least 4 hours (ideally overnight) before serving.
